You can totally tell when school is back in session – my posts tend to drop to weekly! I’ll try to be better about that, but no promises.

Smoothies are making a stronger comeback this week. In the winter it’s not always my fav thing, but truthfully, I just feel better when I have them.

So I cheated one day. sue me.

Definitely been a busy week. With school back in full swing, the days are once again flying by.

Luna has been having a grand ole time, and she and Kuma definitely get along very well. They’re both cute as can be.

Can’t see Luna, but she’s in her tunnel. They both tend to join me for my morning java!

Well…she like rice.

Thursday after work my guy and I went for wine and apps and then shopping.

Friday after work I went back to the mall to exchange something (got the wrong color) then stopped for Thai before heading over to my boyfriend’s house for the night. We watched Game Night, which was actually a lot of fun. Can’t really go wrong with Jason Bateman.

Saturday morning was a lazy one and we eventually headed out to brunch. We went to The Bee and the Biscuit, which neither of us had heard of, but had vegan brunch options so off we went. It was a bit of a hike from his place, but holy crap – it was awesome! Place was packed and there was an hour wait, but well worth it.

They have a ton of outside seating, an outdoor bar, fire pits, and handed out blankets and games. He and I sat under a blanket on a bench right in front of a fire pit sipping on our drinks! The restaurant itself is a big farm house and was ridiculously adorable. Really loved everything about it.

Then we were off to the Eastern Shore and Cape Charles. First stop was Buskey’s. Same cidery that we love in Richmond has a tasting room a bit closer to home. We sat and chatted with the woman working there. She happens to be a teacher in VB but also waitresses at a different restaurant when it’s open during the tourist season as well as Buskey’s. Does make me sad to think that so many of our teachers have to work multiple jobs.

Then we walked the block or so over to the Cape Charles Distillery where we had a couple drinks, met another couple (she and I have the same first name), and spent some time talking to the (slightly odd) bartender. But overall, very fun and neat place.

We were going to hit up Bee and the Biscuit again this morning with our kids, but the weather was horrible and the rain would’ve negated the cool fire pits. So – we’ll try again next weekend!

Today was all school work, all day. That’s okay though. It topped off a really awesome week.

MY YEAR OF LESS

Umm. I shopped. Not crazy obsessively, but it seems like I ran out of a lot of personal products (makeup – even tho I don’t wear much – and skin care stuff) all at the same time. And a watch charger to leave at my boyfriend’s house.

I’m finding it really hard to get back to the groove of my rules. Going to reread the book that kicked all this off to begin with!

New Year’s Eve meals were pretty spartan. I had a big bowl of oatmeal with blueberries and pumpkin pie spice for breakfast.

I munched on some pretzels and black bean hummus, and then later in the evening some tortilla chips and salsa. Just wasn’t very hungry yesterday.

This morning started with a yummy green smoothie. Water, banana, mandarin orange, frozen mangos and pineapples, and spinach. Really, really good.

Lunch I munched on some Wildwood baked teriyaki tofu. No pic of that because I literally just ate the block of it.

Dinner tho – busted out the Foodi again! I used the pressure cooker to make a lemon risotto and then the broil function to roast some carrots. If you’ve ever made risotto – it’s a total labor of love. Typically it takes me about 40 minutes on the stove – and you have to constantly interact with it by adding small amounts of broth at a time and stirring until absorbed. For this, it was literally garlic, 5 cups of veggie broth, 2 cups of Arborio rice, 1/4 cup of lemon juice and a little salt. Pressure cook on high for 7 minutes, natural pressure release for 10, then quick release. I added about 1 tbsp of Earth Balance into it to make it a little creamier.

I also made a loaf of fresh French bread, some brownies, and started a batch of soy yogurt.

Today though, I was that girl who went to the gym on New Year’s Day. Did a weight circuit for 45 minutes and then came home. No run today – my legs were jelly!

LIFE

Sunday night my son’s girlfriend came over for dinner, games, and to bring us our gifts (so sweet). For me – she got me this mug which is utterly perfect! Think it’ll become my work mug 😂

She also got me 3 Himalayan salt shot glasses. Where she, M, and A promptly did Tequila shots while I watched. Tequila and I aren’t on speaking terms…

Well, I didn’t have quite the NYE I planned, but it was all good. Originally my boyfriend and his kids were coming over to finally exchange our Christmas gifts, have dinner, and maybe watch a movie. Then I was going back with them to spend the night there. Alas, sidelined by illness. Just hope he feels better soon!

I did go over with their gifts and a cake. I got some wonderful gifts including slippers I really wanted from my guy and a sugar skull ornament from his youngest! I know it’s an ornament, but it’ll stay out all the time.

I don’t like shoes on in my house, so my guy leaves his crocs here and I have new slippers!

Then I took the gifts they got my kids back to my house. Not quite the exchange we planned, but getting all 7 of us together at one time is quite the challenge. R got a camp chair she’s been wanting since we took that camping 101 class. She’s barely left it since 🙂

Otherwise it was a quiet night. I was actually asleep by 11!

This morning I woke to almost 70 degrees! And that meant having my morning java outside!

I spent the day organizing, taking down the holiday decorations, cleaning, and cooking. I also finished Infinity War on Netflix that I started last night.

I’m not the biggest resolution kind of person, though I do love the idea of fresh starts/clean slates, etc. For me it’s more about being a positive influence, helpful when I can, caring, thoughtful, etc, but this year I’m adding working towards a start up idea I have and see where that may take me.

As for 2018, all told it wasn’t bad at all. Lot’s of life changes, but it’s amazing how things turn out even better than expected or could ever hope for. I’m happy, healthy, and loved. What more can a girl want?

Otherwise, miscellaneous pics! Luna has been coming out and about even more the last day. It’s warm, so doors and windows are open and she’s chilling in them often. Demands head scratches and is really a mild mannered sweetie. Very grateful to have her in our family.

MY YEAR OF LESS

Something dawned on me yesterday as I ran out to the store for the 4th time. By suspending the shopping/money spending rules for the holidays, I found myself justifying continuing to buy stuff and go out. Saying it was all “holiday” related. It’s like I tossed my rules right out the window. Thankfully the holidays are over and this is the beginning of a new month.

So $ spent today – nada. Hope future posts keep saying that!

Elevator Hell and Other Shenanigans

My sister’s black bean soup recipe!

The Other C’s Black Bean Soup

Ingredients

  • 1 onion – chopped
  • 1 tbsp cumin
  • 1 tbsp oil
  • 3 cans black beans (NOT drained and rinsed)
  • 1 can veggie broth
  • 1 jar chunky salsa
  • 1 lime, juiced
  • Salt to taste

Directions

  • Sauté the onion and cumin in the oil until the onion is soft
  • Purée 2 cans of the beans with can of broth
  • Add the puréed mixture to the onion, add salsa and 3rd can of beans
  • Add lime juice
  • Bring to a boil and simmer for 30 minutes

It’s really my favorite black bean soup recipe, and SO good. I did some slight modifications because I’m lazy. I also try to minimize oil whenever possible, so I actually sautéed the onion in just a little bit of broth, then added the cumin, 2 cans of beans, and the broth – took the immersion blender to it, and then added the rest per the directions.

And a Mexican birthday dinner out which was veggie fajitas for me.

I made a cake (A decorated it) and homemade peppermint ice cream too. Was a really fun time and yummy eats.

And tonight is crockpot red beans and rice!

FITNESS

Had a lot of good workouts this week.

A couple runs at the gym on the dreadmill. A combo of music and having the TV with subtitle on made it semi-bearable. But it’s better than running in the wet and cold, so I’ll take it.

Also got that swim workout in! Honestly, it was awesome. And honestly – was tough too! But – time in the hot tub then sauna after was heavenly.

Also did some weight training since I was there. Nothing crazy, but it’s a start. Took advantage of the ActivTrax program at the Y, which makes it relatively foolproof – which I definitely need when it comes to weights.

LIFE

A whole year down, baby! That’s right – the first year of my doctorate was wrapped when I submitted my last paper Tuesday night. And that was 3 whole days early! To say I’m proud is an understatement. Been a wild year for sure. But – love it. Love learning and being challenged.

One relatively horrifying thing happened this week though. I got stuck in a %#$%^#$ elevator!! I had just finished a late lunch and was heading to my car to head to my evening meeting. My car was on the 5th floor of the parking garage, and the elevator got stuck somewhere between 3 and 4. My cell had no service and my first several attempts to raise help via the elevator emergency call button was fruitless. I did eventually get through, but it took way too long. As a bit of background – I’m wicked claustrophobic. So I found myself sitting on the floor of an unmoving elevator crying. After a few, I realized I had my ipad too, and tried that. Sure enough – there was 1 bar, so I could text. I texted my oldest and my boyfriend. He offered to come out, but that wouldn’t do any good. Was still sweet though.

I was eventually freed. And I won’t lie – I was a mess by the time they got to me. The building employee actually wanted me to come to the lobby to fill out an incident report. BY GETTING IN AN ELEVATOR. I ever so politely told him to get bent. Gave my name and number and took the stairs up to my car. Fun. Times.

Other fun this week was getting my downstairs bathroom done. When we ripped up the floors, we found water damage – which was beyond our abilities. So I hired a contractor who had to rip everything out and replace the subfloor. They’re in there as I write this finishing up, and I’m SO excited. It’s the last thing – other than grabbing those rugs I want.

Of course there was coffee and Kuma and other shenanigans, like a holiday party at my friend’s M&R’s house last night! No pics of that though. Hmmm…

I’ll be honest, not sure I have much to report here. No real expenditures now that Christmas shopping is over. Did go out to eat and am going to the movies with my kids on Sunday (bought tix already). That’s about it.

I Need Work Shoes…Who Knew??

I think it’s really fortunate that I love to cook. Well, I guess it’s only fortunate that I’m a GOOD cook. Would kind of suck for people if I loved to cook but was terrible at it…

Anywhoo. There was lots of cooking the past couple days.

But first. Smoothies!

Chocolate Vega powder, banana, and spinach

Saturday night was an Indian Feast + Game night. I made 8 dishes:

  • Garlic naan
  • Basmati rice
  • Tofu/pea tikka masala
  • Red Lentil Dal
  • Soy Yogurt curry Potatoes
  • Charred eggplant and potato
  • Curried cauliflower/carrot/peas
  • “Butter” “chick’n” – made with soy curls

Cooking took several hours, but that was fun

Sunday was obviously more chill. I marinated some pressed and cubed tofu in tamari, lime juice, garlic, and agave, and then stir fried that up. Also made a sweet and sour red cabbage dish in the Instant Pot too. Very simple recipe of broth, apple cider vinegar, unsweetened apple sauce, and salt.

Today was lasagna-ladas! Basically – and I’ve mentioned this before – I’m lazy. I don’t like going thru the drama of rolling up the enchiladas since it all ends up a mess anyway. So – layer the corn tortillas and filling like lasagna, top with enchilada sauce, and bob’s your uncle.

Mine was loosely based on Chef AJ’s Enchilada Strata dish from The China Study All-Star Collection. I used canned enchilada sauce (read above “lazy”), and some different fillings. I also topped with my pickled jalapeños from last week! SO good.

FITNESS

Okay, had two runs. One Saturday morning and one this morning. I also did a Beachbody workout today called LIIFT4. It’s a combo weight training and HIIT program. Just launched today, so I figure why not check it out? I really enjoyed it, though I was literally a sweaty puddle on the floor after….

LIFE

It’s only been a couple days, so not a whole ton! Saturday afternoon I went out with my guy for a while. Then we went grocery shopping and came back to my house so I could start my marathon cooking spree. It was fun bouncing around the kitchen, drinking wine, and getting kisses.

It turned into a little party. It was me and my 3 kids, him and his youngest, a friend of A’s, M’s girlfriend, and another of M’s friends. Certainly plenty of food for the 9 of us. The kids all hung out either playing or watching video games, and the playing a board game after dinner while my guy and I chilled outside and then napped!

Sunday was cleaning, yard work, and reading. Very low key. Just maybe a wee boring. BUT – one more week and my next term starts and then I’ll wish to be bored!

Today was work and finishing the yard work. That’s it!

Definitely need “work shoes”…my flip flop life ain’t havin it…

On a different note – I have been seriously slacking on my “becoming a morning person” plan. And after some serious shaming by my guy yesterday, I’ve recommitted to it. Despite the fact that lately I can’t seem to fall asleep before midnight-one am (and last night was no different), I still got my a$$ up at 530. It wasn’t fun. It wasn’t pretty. But I did it. So suck it, baby.

MY YEAR OF LESS

Month one is DONE. Overall, I’m pretty happy, though there are areas I can definitely tighten up.

Overall, I spent 9.56% more than I intended. That was due to a few things I bought for the house (to facilitate said yard work mentioned above), and MUCH higher water and power bills than anticipated. My water bill was 252% higher than budgeted and my power bill was 63.9% higher. What was cool was I was under in so many other areas. Not always by a lot, but by enough that – even with those crazy expenses – I wasn’t too far over what I thought I’d have in expenses as a whole. I spent much less on groceries, gas, entertainment, and my natural gas bill than I budgeted. Will definitely trend that over time.

All this meant I put a healthy chunk into savings as well as paid down some other bills. All told – good first month, but I know it could be better. Stay tuned!

GET ME OUTTA HERE (aka – Cabin Fever Stinks)

Well, this week has been a fun little challenge of “can’t go outside, so whip up fun stuff with what you have in the house!”. Thankfully, I always have tons of different veggies, rice, tofu, beans, not to mention what’s in the big chest freezer in the garage, and about a billion spices. No one will go hungry nor get bored just because we’re snowed in. We might get majorly stir crazy…but no one will starve!

Despite it being insanely cold, I still do my morning smoothies. Had a vanilla mint theme going on most of this week. Vanilla Vega powder, Ripple Pea Milk (my new total favorite thing), spinach, peppermint extract, and ice.

I’ve also made a ton of different ramen-esque dishes too. Also went out to lunch (before snowmageddon hit) for a yummy vegan ramen too!I decided to try a different method for making my soy yogurt. For years I’ve used the Euro Cuisine yogurt maker. And it still works great. But it makes 7 small jars. Which is fine, but I use it in cooking so much, that it’s sort of a pain to measure out. Yes…first world problem. But see, I have an Instant Pot – have had it for a bit now – and it has this lovely yogurt function. Was high time to try it out. And it did NOT disappoint! Oh…and I also discovered this yumminess called Noatmeal! It’s a grain-free oatmeal dish made with hemp seeds, chia seeds, and coconut. I added a ton of cinnamon. Yum! Works as an ONO (overnight oat) dish too.I made several batches of my tofu eggless salad. My fav way of eating it is on a big bed of greens. This was my lunch most days.Also whipped up a few tofu curry dishes. My fav one was a red coconut curry with tofu, cabbage, onions, and riced cauliflower.For snacks – kale chips! One of the things I love for my air fryer. I used to dehydrate them (LOVE my dehydrator), but I tend to like instant gratification, so 5 min in the air fryer for crispy chips is the bomb.And of course we did a big comfort food night. BBQ tofu, sweet cornbread, mashers, and soy/garlic mushrooms. All told, a week of most excellent eats!

FITNESS

Well if you haven’t figured it out – we got snow. And not just a little bit – but a boat load of it. Over 5 days ago. And the roads still aren’t passible. Runs have been out – which sucks. But, thank goodness for the home gym! Weights and kickboxing and yoga for the week. All good, but I’m itching to run outside. Hell – I’d even take a dreadmill right now if I could just get out of my driveway.

LIFE

Despite the intense cabin fever the past 5 days, it’s been a good week or so. The night before snowzilla visited us, I got to catch up with a good friend of mine at a local spot downtown. We had yummy wine, mixed drinks, tapas, but mostly, just great company.I got my hair done about a week or so ago too. I get a lot of blonde in my hair in the summer, but my normal color is auburn. So my hair was really looking two-toned and making me nuts. So, enter my stylist (who I love), and we decided just to make me a redhead! It’s kind of fun, though is taking some getting used to.I have literally been in the house since Wednesday afternoon of LAST week. That’s right. I managed to be at work (in the office) ONE DAY since the holidays ended. Why? Snow. I mean, I grew up in Wisconsin, so I find this slightly embarrassing, that a foot of snow in SE Virginia shuts us down for a solid week! And honestly, if the temps stay at 20-something, we just may be stranded indefinitely. Fortunately, it’ll be 70 by Friday and Mother Nature will thaw us out. But seriously. It’s ridiculous. Schools are canceled, and pretty much everyone works from home if they can (thankfully I can). And even when you shovel your own drive, the city doesn’t plow anything but main arteries, so I can’t even get out of my neighborhood. You thought I was going bonkers in my last post. It’s been the better part of 2+ weeks now! ARGH. And on top of it, I just bought a new car and I really wanna drive it ;)So, I’ve spent a lot of time chilling by the fireplace. Often with the Kuma bear. On a fun note, my doctoral program started! Technically today was the first day, but all the materials were released on Friday – so I got a TON done over the weekend. Guess being snowed in = forced study time. It’s all good though. I do love learning. I have my desk set up with multiple devices so I can easily read and take notes and do research seamlessly. I also finally set up the Echo Dot I won back in October at a meeting in Tampa. It’s pretty groovy. She plays classical while I study, and Depeche Mode radio while I cook. She tells me dumb jokes and is overall pretty entertaining.So that’s about it. The black bean and sweet potato enchiladas are about to come out of the oven, then it’ll be grub time and then back to studying!Hope everyone else out there isn’t held captive in their home (even though it’s warm, clean, with plenty of food). A girl needs to get out once in awhile!

Too Much Time Off Leads to Excess Cooking & Working Out

The past week and a half have been pretty yummy, I must say. I get so excited when I get a new cookbook, that I have a tendency to cook a ton from it. I’ve also been off work, so that means even more food to cook and recipes to create! I made some homemade hemp milk, spicy tofu and Brussel sprout soup, Christmas Pizzas, my typical daily salads, and cream of broccoli soup (it’s been COLD). Of course I also went out for Thai one day because…it’s what I do. The kids were all at something (2 at the movies and 1 at a party), so I had a lovely solo dinner at my fav Thai restaurant with my trashy book and some wine. Perfect!

I also decided to play with riced cauliflower. I know it’s quite popular and I’ve been meaning to, but I have a tendency to make other things with cauliflower when I buy it. Like Indian food! (Which is on deck for tomorrow!). But – I was shopping and came across frozen pre-riced cauliflower. I mean really – if they’re going to make it THAT easy for me, who am I to pass it up?

So this evening, in addition to the broccoli soup (which is really just broccoli, celery, garlic, onion powder, vegetable broth, and coconut milk), I decided I wanted a creamy and cheezy cauliflower rice dish. And oh man, it rocked. My eldest was dying over it. Comfort food at it’s best – but sneaky in it being a much healthier version.

Crissie’s Creamy Cauliflower Rice

Ingredients

  • 8 cups riced cauliflower. If you rice your own, be sure it’s the post-ricing measurements.
  • 1 can full-fat coconut milk
  • 1/4 cup vegan cream cheese (I used Tofutti because it’s what I had, but I’ve had Daiya’s often too, and like it)
  • 1/2 tsp garlic salt
  • 1/4 cup nutritional yeast flakes

Directions

  • Put the rice, coconut milk, cream cheese, and garlic salt into a large sauté pan (if you don’t have one big enough, a wok or even stock pot will work)
  • Cook on medium heat until it’s all heated through, cauliflower has reached a firm tenderness (I realize that sounds weird. Look – you don’t want it mushy and you don’t want it crunchy. So whatever you want to call that in between state), and some of the liquid evaporates, leaving a creamy consistency. About 15 minutes.
  • Stir in the nutritional yeast
  • Salt and pepper to taste

Seriously – YUM.

FITNESS

Runs, yoga, and lifting in the home gym. Thank GOODNESS for the big space heater in the garage, because it’s been bloody freezing out. I turn it on before going out for my run so it’s fairly warm when I get back. By the time I grab some water, go to the bathroom, and head in there, it’s comfortable.

This is also my fav time of year to do hot yoga. I mean – all the time is great – but there’s something amazing about the hot and humid room when it’s cold out.

And – I’ve decided that 2018 will be a run streak with a goal of 1000 miles. Wasn’t quite feeling the 2018 mi in 2018 challenge just yet, but I plan to beat 1000 easily. That’s less than 3 mi per day, and since I’m doing 1/2 marathon training the first half of the year and marathon training the second, I’m pretty confident that 3 mi per day average will be easy.

LIFE

Well, it’s been fairly quiet. I’ve been off since Christmas, and other than family time and solo time, I’ve also had some friend time (of course – love going out and about!). I will admit though, I’m going bonkers. I have no work to catch up on since pretty much everyone is off. The house is clean (a girl can only shampoo carpets so many times). I work out every day. I read. Watch some TV. And I’m going out of my mind with boredom. A couple days of chill are fine. But a whole week of it, and I feel like my brain is melting from misuse.

Oh well, I should enjoy it. Not only is it back to work on the 2nd (though I’m really stoked about a few interesting things going on for me), but since I tend to be a regular glutton for punishment, I am going back to school starting Jan 8th. Found a great doctorate program in strategy and innovation – so why the hell not, right? I realize I have an addiction problem to school. Those who know me well won’t be surprised at all. But I swear, this is the last time. Okay maybe not – I still have yoga teacher training planned someday. Anyway – the run streak is also so I make time for myself – something I tend to suck at when I have so much on my plate.

The week leading up to the holidays was full of work-related parties and those are always a good time. It’s nice to catch up with people outside of the office now and then.

Christmas itself was quiet. Most of my family is in Wisconsin, so it was really just me and the kids. M had to work on Christmas day, so we actually did the Christmas gift stuff around 2! Then it was homemade pizzas. We’re not the most traditional family – never really have been.

Probably the most exciting news is that my eldest made her first big girl purchase – a car! She’s excited and I am too.
