Let’s get the non-Thanksgiving pics out of the way first!

On Wednesday, I had ramen and my very first bubble tea with my guy! Mine was coconut milk with Oreos.

Wednesday night was one of my fav chili recipes – Chili Con “Carne”. It’s from one of my older cookbooks – Vegan Lunch Box from 2008. I don’t dust it off very often, but I can’t seem to part with it either when I do my book donation purges every few years. This particular recipe is practically worth the price of admission, so I keep it around.

Today I had lunch with my guy and his youngest – a BAS (no Romaine, thank you!). Dinner was leftovers.

So what did we do for Thanksgiving? Other than have a really nice evening, there was ten tons of food too.

Breakfast was toast with sunflower seed butter. And a mimosa!

Will prep now – this was an Omni gathering. I only cooked vegan eats, though my guy made 3 dishes (1 vegan, 2 not) and my son’s girlfriend brought 3 dishes (2 vegan, 1 not).

On Wednesday I baked ten tons of cookies. Choc chip that actually weren’t that good (won’t use that recipe again) and my normal oatmeal raisin cookies that do rock.

On Thursday, the marathon began! But first – snacks. No meals other than the “big feast”, so snacks are put out for everyone to munch on, and get put up about 2 hrs before meal time.

Son 2 made me realize I forgot the dessert hummus this year!

Started with a pumpkin pie (which we still haven’t eaten!). Then green bean casserole, butternut squash au “gratin”, 2 tofurkey’s (one in a crock pot, one baked), sweet corn bread, sweet carrots, two gravies (one that came with the tofurkey’s and a homemade mushroom one) and stuffing with wild rice.

My guy made the mashers (vegan) and also made corn pudding and brought smoked turkey.

My son’s girlfriend made two types of croissant dishes – the dessert one was vegan – and a big batch of sangria!

And because I’m really paranoid about dishes coming out at the same time, I employ the sticky note method! R mocked me for it a little, but hey – it worked. Everything came out at the same time!

There were 9 of us in all. Me and my three kids, my guy and his two, my son’s girlfriend, and his best friend – who’ve I called Son 2 for years. And we had MORE than enough food.

And by the end of the night, my heart and belly were very full! And how could it not be? I was surrounded by many of the people I love most in the world, so yeah – it was a perfect day.

FITNESS

So, inspired by the run that didn’t suck on Monday, I wanted to run on Wednesday too. BUT, it was too cold for me (31 degrees), so this happened…

And I typically hate dreadmills, but I really wanted to run, so here I found myself. I was 19 minutes in, and my right calf cramped so badly I actually had to stop. That sucked. But I hopped on a recumbent bike for 20 so I still got a workout in. The upright spin bike put too much pressure on my calf, but was fine on the recumbent. Guess that’s one benefit of going to the gym…

Yesterday before cooking I did a walk/run – only about 20 minutes because I didn’t want to press my luck. Was fine though.

Today I went for a hike! REI has their #OptOutside campaign again this year, and I do like the idea and there just so happened to be a meetup group going to First Landing State Park for a 3 mile trail hike that sounded perfect. So, I signed R and I up, and my guy had thought to go too – though that fell through. And frankly, at 7am, R didn’t want to go anymore either (freakishly cold, and she hadn’t had a great night’s sleep), so decided to go anyway! There were 6 of us (though 21 originally committed), and while it was wicked cold, after a half mile or so, was warmed up enough to really enjoy it. Everyone was chatty, so the time really flew.

After, I met up with my guy and his son for lunch, and then went home. I took off my shoes and sat by the fire before going over to my desk to get studying. My ankle started to feel a little sore, and after 20-30 minutes, was agonizing. Now, I did trip during my hike over a root – didn’t fall, but it was less than graceful. But I felt fine all the rest of the hike and after, so I can’t be sure that was it, but I have no other explanation.

So RICE it is! Rest – Ice – Compression – Elevate. It’s largely feeling better, just can’t rotate it without pain. For awhile there, it wasn’t weight bearing at all. Ugh – finally get my running mojo back and I get this. ARGH.

LIFE

Can’t complain! (Other than the ankle drama).

Wednesday was some work and errand running. Including finishing grocery shopping. Behold – my list…

My accent chair arrived, and I’m fairly pleased. Kids love it. It’s not a long term chair, but definitely wanted something in the study other than the desk and the book shelves. It’s a place to read, etc. Need to pick up a side table, hopefully this weekend.

Thursday was Thanksgiving, and a really wonderful day. My oldest works night, and was working, but came home, slept until 2, and then got up to spend the day with everyone before going back to work. My guy came over fairly early (his boys started their day with the other side of the family and then came over by my place). We took a run to Starbucks to get java and see M, who had to work. We spent the rest of the afternoon cooking together, which was a lot of fun, while the kids all watched the Lego movie. Watching them watch it and laugh and sing was really fun. Good thing I have a HUGE sofa – all of them sprawled out on it.

Then it was dinner and everyone in food comas. Let’s just say that things were much more tame after the eating ended. Then it was cleaning and dishes for me while everyone just relaxed and slowly dispersed.

And today was up early, hike, lunch, and school work. One of the contractors came to assess my half bath, and I should have that estimate tomorrow. The guy my coworker hooked me up with was a no-reply and no-show, so that sucks. Still have two tho, so hopefully those will balance out.

Okay, I will start off by saying I’m at a vegan bloggers conference, so buckle up for a couple of days of me drooling over all the vegan eats that other people make!

Wednesday was a two Tofurky Kielbasa kinda night.  I was so stuffed, but it was great.

On my way to the airport yesterday, I stopped at Tropical Smoothie Café for a breakfast smoothie.  Pomegranate plunge + greens is my current obsession.

Not long after arriving in Austin, it was off to the Vida Vegan Con meet up at Buzz Kill!  I had a chicken salad wrap (vegan, of course), very berry lemonade (it claims there was vodka in it, but I’m not so sure!), cookies and cream coconut ice cream, and a beer.

FITNESS

The only day this week I’ve missed a run was yesterday, and that was due to travels.

I mostly run in my neighborhood, but actually went to Oak Grove Park on Wednesday.  I was going for a longer run in the heat of the day, so I really wanted the shade I can find there.  It was a nice change of pace.

I have to say, I’m loving the new house and pool.  Nothing like jumping in and floating about after a sweaty run!

Today I ran near my hotel in Austin, TX.  The weather is similar to VA, so the hot and muggy doesn’t bother me, but holy crap, the hills!!!  I’m so not used to them, and my pace suffered.  I’m sure my legs will be angry too.  I may end up on the hotel treadmill tomorrow!

Other than that, I’ve done a few bodyweight workouts from my Microsoft band.  Squats, crunches, things like that.

LIFE

On the work front, it’s been a short week.  Monday was a holiday, and I am on a mini vacation Thursday and Friday!  So no complaints there.

M had a gaggle of people over on Monday to swim and hang out, and R had a couple friend over as well to swim and play video games.  A went out with friends, so all told, very nice Memorial Day.

Then it was off t0 the third and final Vida Vegan Con – vegan bloggers conference – in Austin, Texas.  It’s only been one day, and already it’s been so memorable.

I had just boarded my flight from Atlanta to Austin when Fran Costigan (http://www.francostigan.com/) tweeted to see what other VVC people were on board!  I replied I was, and we met up at baggage claim and shared a cap to our hotel.

About a half hour later, I went up to her room, and her room mate is none other than Terry Hope Romero (http://veganlatina.com/)!  I have so many of her books, and she’s like this vegan punk rock cookbook goddess.  And she hugged me.  I tried very hard not to geek out (but failed).

Fran and I cabbed it to the pre-conference meet up, where I got to see and meet SO many people – new friends and old, it’s impossible to list them all.  But here are a few 🙂

Barely Controlled Chaos

Okay, so this is clearly going to be a normal narrative instead of the breakout.  Once again, too much time has passed (sigh).  Three weeks, though I think about doing a “quick post” every day.  And then realize I have so much I want to say, that “quick” isn’t going to happen – so nothing happens.

The good news is that the project I keep talking about sucking up all my time is nearing it’s end.  The last big go-live was this past Saturday – and it was the biggest so far.  It’s crazy and busy and totally wonderful.  This is what I love most about my job.  I spend months – sometimes years – bringing something from an idea into reality.  Watching people use it, solving their problems, and making a positive impact on patient’s lives in the process is the most amazing experience.  It’s crazy, there are meltdowns and issues and successes, and it’s certainly impossible to please everyone – but it’s totally my element and I totally thrive on it.

So I worked Saturday night to Sunday morning (9pm – 8am) and then immediately went to NS’s house.  She was hosting our vegan meetup group for a Bunch Ado About Nothing party.  Bloody Mary’s, Mimosa’s, and excellent grub.  My contribution was the spicy vodka!  I worked all night and wasn’t able to make any food, but someone has to supply the booze.  I was planning to nap for a bit, then party with the crew, but ended up just staying up, partying with the crew, then going home.  It was one of the more chaotic days in recent history, but totally awesome.  I managed to stay mostly coherent despite lack of sleep, so that was a bonus.

I’ve also been all over the state in the past 3 months doing one go-live or another, so that involved a lot of traveling.  This most recent trip to the DC area I did combine with some much-needed days of fun.  I took my girls with me and we spent a day in DC, a day in Philly, and a day in NYC.  Back to DC, work, then back home.  A whirlwind mini-vacation, but oh so worth it.

Aside from work stuff is trying to spend as much time doing things to balance my life.  Cooking, yoga, running, working on personal projects, reading, and spending time with my family.

My son is working as a junior counselor at an away camp this summer, and I took him last Thursday.  He’s doing great and totally loving it.  I’ve always seen M as someone who naturally shines in anything that involves helping people.  He’s passionate about social justice, helping people, and is just an overall amazing kid – he’s caring and sweet and funny as hell.  I think his latest is wanting to be an actor – which is totally cool because he rocks at it.  Personally, I’ve always pictured him as a teacher or social worker!  My parents want him to be an engineer, because as my mom once put it “building bridges helps people.”  I suppose she has a point there too.

My oldest seems a little lost this summer, and I feel for her.  She’s struggled to find a job (home from University), misses her friends, and is bored stiff.  She’s now planning on volunteering all summer, which I think will be good for her.

R has graduated to middle school!  That is crazy to me.  She’s totally nervous about 6th grade and going into the biggest middle school in our state, but I think she’s going to be great.  I wish she had as much confidence in her as D and I do!

For those that don’t already know, I’m a major soccer fan.  And as a bit of trivia for all the haters who think the “arrogant US” created our own word for their “football” – here’s a bit of trivia.  We didn’t.  It was a British term when they shortened what they called Association Football to soccer (to differentiate from other footballs, such as Rugby).  It was prevalent in British writing for a long time, and it’s where we got the word.  We kept using it, and as soon as we did – they stopped.  It slowly disappeared from their sports writing, and now the rest of the world thinks we just like doing things differently, when in fact it wasn’t us.  Just saying – bugs me.  For more deets, read here.

To that end, we’ve been glued to every game we can.  Watched England vs. Italy in New York, the USA vs. Ghana game in DC, and last night’s game in bed with my husband and girls (I had been awake for almost 40 hrs, and just couldn’t hit up a pub to watch it).  Talk about a nail biter.

So in a nutshell, my life, especially for the past seven months, has been barely controlled chaos.  I can’t complain, because I do love it in some ways, but I can honestly say, I’m looking forward to life evening out soon.

Baking with a Hammer is the Only Way to Go

Okay, so clearly the big highlight is that I baked. And I used a hammer. Next time, I need to find a reason to use power tools 🙂

We had a vegan meet-up at NS's house. But first?? GIRLS SLUMBER PARTY. Yep….I'm 40 years old, and I still slept over at a friends house! NS, KP, and I hung out, drank a bit too much wine, and made homemade pizza. Yes – three vegans in one house overnight. Madness ensued.

NS made me tofu scramble in the morning. So spoiled 🙂

 

Sunday was the Cookies & Cocktails party! I made a candy cane & chocolate chip cookie from The Vegan Cookie Connoisseur that my parents got me for Christmas a few years ago. She has a whole holiday chapter, and these were perfect. And I got to use a hammer to smash a bunch of candy canes, so that made it all worth while.

For my contributed cocktail, I made my Ghetto Gin Gimlet. When I was 'younger' my fav drink was a Tom Collins. At that age (don't ask) the Tom Collins mix was too expensive, so I'd mix gin, Rose's lime juice (must be Rose's…it's sweet), and diet citrus soda (50/50, Sundrop, Fresca, etc).

My fav cocktails of the evening was KP's Pointessia with champagne, cointreau, and cranberry juice, and NS's White Russian (no idea how she made it – but it has Kalua and cocount milk at least). Totally awesome.

On a side note, I made a killer Taco Tuesday taco salad with lettuce, refried beans, spicy tofu, fajita veggies, guacamole, vegan cheddar shreds, and salsa. Everyone ate it up!

lt good to get back to some runs this week. I needed it! Yoga is on the docket too – hopefully with the holiday's, things will ease up a bit at work and yoga will be more of an option.

So for some totally cool news…..I won a lottery entry into the Cherry Blossom 10-Miler in DC in April!!! So those of you who know me, I LOVE LOVE LOVE going to DC during the Cherry Blossom season. I live 3 hours away, and we try to go every year. The race is a very big deal, and a couple years ago, they went to lottery-based entries because it would sell out in less than a minute. As it happens, AT texted me the day the lottery opened, so when I had a free moment, I entered. I was so shocked to get the notification yesterday that I'm in! So totally cool – in one of my very favorite cities in my favorite time of year getting to run a race I love….too perfect. Who's up for a road trip to our nation's capital?!?

Well, where to start? I was deliriously babbling by 8pm on Friday. D and the kids poured me into bed, and I was out before 9…..and I slept for 10 hours!

Saturday was mostly a blur until it was time to have D drop me off at NS's house. I showed up in jammies, and when KP arrived, we got busy breaking into the wine and making pizza.

Sunday was the party – which was awesome – and then D and the kids picked me up and we went to see the new Hunger Games movie – Catching Fire…which was totally killer! Everyone needs to see it. I hate that I have to wait another year or two for the next one….

Yesterday I had an early morning meeting, then it was D and my's annual pre-holiday day off together. We stay home for a bit, then finish Christmas shopping, have lunch, happy hour, and basically spend the day with just us. It was a totally amazing day. You don't want the details (trust me), but it was a great day all around.

Today was back to work (hello crazy schedule) and D took R to the Myth Buster's live show tonight! Speaking of…they just walked in. Gotta run, say hello, and head to bed!!!

Well, food has been in magnificent abundance! I’m still obsessed with raw foods, and have kept to the raw until dinner format. I’m not saying I have ambitions of being a raw foodist, but I do have to say the food is amazing, and I feel incredible.

Friday night we went out to dinner. I had a big chopped salad (which was OK – not great) and a caramelized onion and portabella mushroom flatbread (which they screwed up the first time by putting cheese on it, but when it was right, it was tasty!).

Saturday I didn’t eat much during the day – a fresh juice for breakfast and some veggies to snack on during lunch. Why?? Because it was vegan meet-up night! The theme was French food (our host just got back from France), and I knew the food would be plentiful and wonderful. I wanted to be hungry.

When the theme was announced, I called dibs on ratatouille. Hence the title of the post – and if you haven’t seen Disney’s movie Ratatouille, then shame on you. Anyway, my version was a very simple slow cooker version of eggplant, onion, garlic, zucchini, tomato, Herbs de Provence, and stirred in just before serving, a basil pesto. There wasn’t much left, so I think it went over well.

Today was another fresh juice (of course – with a new juicer, that’s going to be a daily occurrence!), a BAS for lunch, and some pumpkin curry soup at Whole Foods for dinner. YUM.

I spent the evening prepping eats for the week. I made a raw pineapple red Thai curry sauce that’s currently on sprouted wild rice and cauliflower for lunch tomorrow. I also prepped a container with all the prepped produce to make my morning juice faster. I have to leave by 7am, so no luxuries in the morning!


FITNESS

I did a great YogaGlo restorative class yesterday. I was feeling unmotivated to do anything, so opted for some gentle yoga vs. anything hard core. My back was a little sore (we’re badly in need of a new mattress), and figured that would be a good class. As usual, I loved it. I had actually don’t this one before and knew how much I liked it.

Today I had really planned to go run – but it was only 35 degrees out, and I just couldn’t face the cold. More yoga and a meditation session via YogaGlo.

LIFE

I think I mentioned a few months ago that my office moved. Back in July, all of my division (save one team – my husband’s) moved to the same location. It’s triple the commute time for me (which I hate), but it’s also nice to be in the same building with almost all my co-workers. To decorate the new big building, my company decided to go with employee art! They did a photography “contest” (not really a contest, but an open call to the art committee to submit photos to be blown up and hung around the building). 4 of D’s were chosen, and they were all blown up and ready to hang this week. Since I work in the building and he doesn’t, he, R, M, and I went out there Friday night to walk through the offices and look at all the beautiful photos. I’m very proud of him. As a side note, he was eligible for the project because his VP works in the same building, and while he won’t see them regularly, I will! One of them is right outside my office!

Both Saturday and Sunday were extremely lazy mornings. After waking, I made my normal hot lemon/ginger/cayenne tea, and then crawled back into bed to read. Yesterday I spent nearly 3 hours before deciding to move! Today was 2. It actually felt really, really awesome to just wake up and relax.

Of course last night was the vegan meet-up dinner! AC was my date, and she brought French wine to the festivities! It was a really great time. She’s a social butterfly anyway, so I barely saw her the entire evening as we each chatted up different people at the party. All told, there were about 20 people. Afterwards, we did go out a bit so we could have a chance to actually hang out together! It was almost 2 am when I got home – though I slept until 11, so it didn’t really matter 🙂

I had no intention of going anywhere today. I had some work I needed to do, plus a lot of kitchen prep I wanted to get done- which is my typical Sunday. While I was sitting at the computer in the Green Room (sorry – it’s the room where we have the office, book shelves, and pull out sofa and bathroom – called such because the walls are painted green…), D came up behind me, massaged my shoulders, and asked when I was going to Whole Foods. When I told him I had no intention of going anywhere (it’s stupid cold), he gave me one of those looks like ‘who you kidding’. Yeah…I got dressed and went there and the Asian Market.

I hate cold weather. I think I’d be better about it if it was eased into like a normal place (being from the Midwest, I guess that’s my normal). Virginia isn’t like that. 70 two days ago – 30 today. What the heck? Give a girl a chance to adapt! So of course when it does this, I get very annoyed. When I was at Whole Foods, I picked up a bath bomb, and when I got home, soaked in a hot tub filled with lavender/vanilla goodness, drank a glass of wine, and watched the second Lord of the Rings movie. Yep. Lazy day!

Oh yeah – at one point this evening (at the same time) M, R, and D each had a cat snuggling on them. Too cute to pass up a picture opportunity…

I’m looking forward to this week. Tomorrow will be painfully busy, I have a plumber coming one day, and a long drive to and from my daughter’s university on another – but then a four day weekend with my complete (nuclear) family! Yeah. Happy.

Okay, I have a few days to catch up on! It's been mostly raw foods this week. My typical days are all raw foods until dinner, and then something light and cooked – like soup, grilled or roasted veggies, etc.

On the fun side, I have a new toy! I've been wanting a slow juicer for about a year or so, and after lots of YouTube videos and online reviews, I finally bit the bullet and got one! I went with the Tribest SlowStar. It's the slowest on the market (which means higher quality juice, higher yield from the fruits, veggies, and greens, and drier pulp). It came last night, and I've made three juices already! Last night I made a green juice of romaine, spinach, cucumber, lemon, and apple. This morning I made D a pear and orange drink, and for myself a spinach, red bell pepper, sweet potato, broccoli, and collard. They were all really, really good – and filling!

I've had several green smoothies this week, and today's was pineapple, frozen berries, spinach, and cilantro. I'm really digging cilantro in my smoothies lately!

I've also had a raw cucumber gazpacho soup and a huge BAS with my new favorite salad dressing – olive oil, balsamic vinegar, maple syrup, and cinnamon.

FITNESS

The past few days have been as usual – yoga and runs. YogaGlo and not hot though, as I haven't had any free time away from the house.

Group runs start back up at the end of the month, so I'm really looking forward to those. It'll be the motivation I need to get out and about on a cold weekend morning.

LIFE

It's been a ridiculously busy, but mostly good week. I will admit I've hit my wits end a few times and let my frustration get the better of me. I've struggled with people being held accountable for their actions (or in one particular case, INaction), and rather than owning it with a simple “I'm sorry”, them trying to turn the tables and deflect any responsibility for their failures. I shouldn't let it get to me, but sometimes I can't help it….

Otherwise, it's been a good week. Lot's of office time, taking R to swim most nights, and chill evenings at home.

A registered for her classes next semester – and is complaining about having to be up by 745! Poor baby…she clearly forgot how early she got up for school her entire life before college! She'll be home next weekend, and we'll have a nice long weekend together – and kids will be changing rooms! A doesn't get to have the biggest room anymore 🙂

 

I'm looking forward to the weekend, that's for sure. We have a long overdue vegan meet up on Saturday, and AC is going with me! The theme is French food, so I'm going to whip up some Ratatoulle. Should be awesome!
