Managing A Few Days Without Total Chaos!

FOOD

It’s been all homemade eats the past few days since getting home from FL.

that was rectified on Sunday when D went grocery shopping, so Monday’s smoothie was vanilla Vega powder, 2 clementine’s, water, and spinach.

I know the bottle says Shakeology, but I don’t use it.  Not that I don’t think it’s packed full of nutrients, but I had an allergic reaction to their vegan vanilla a few months ago.  So, I still to Vega most of the time and Sunwarrior on occasion too.  To be honest, I don’t use protein powders all the time, but when I’m making my smoothie as a meal replacement or I know it needs staying power (or when I know I’m a bit lacking in some vital nutrients), I’ll toss it in.  After a week of travel and mostly eating out, I tend to add them to my smoothies.

I also did a lot of batch prep on Sunday’s.  That included some of the Happy Herbivore meals and salads.  I have to admit, I’ve become addicted to the Fitpacker container system the past few weeks.  It makes storage a breeze and takes up less space.

FITNESS

Still doing the Beach Body on Demand workouts.  I honestly do like them because there’s variety (my Achilles heel in DVD based workouts).  I’m in my final 7 days of the 21 Day Fix program workouts and I admit to feeling pretty darn good.  And much stronger.  And possibly constantly sore 🙂

I’ve also joined a really active challenge group with a coach who totally understands vegan nutritional needs, so I’m pretty stoked there.  Plan to start the kick boxing program on Monday, which aligns with completing the current program.

Of course I have my 3x per week runs too!

this is me and my helper Ginny doing Yoga fix on Sunday. I have to say that working out at home thrills her in very odd ways. She loves to either work out with me or be near me when I do.

Last night was Cardio Fix.  I’m trying to work out more in the mornings, but it just wasn’t happening on Monday.  I had to be at the office before 7am, and that would involve getting up around 430, and that’s just silly.  So, evening working it was.  By the way, I’m not sure why I’m smiling.  There’s this exercise in this video called Surrender’s, and I’m pretty sure they’re evil.

20170225_171556587_ios

Today was a 3-fer workout.  Upper Body Fix first, and because that was challenging by didn’t wipe me, I followed it with a 4 mile run.  Then this evening, R and I went on a bike ride when she got home from school.   3 laps through the neighborhood for a total of about 30 minutes.

LIFE

Well, it’s been a nice few days!  I’ve only been home for a few, but they’ve been pretty chill.  For the first time since grad school started, it felt like a normal weekend!  Saturday M had some friends over (that we’ve known since they were young) and D grilled.  It was hanging out and being silly mostly.  I also did the week’s meal planning and D did the grocery shopping while I studied.

Sunday was laundry, cleaning, batch cooking, a school team meeting, studying, and watching a movie!  We watched Moana, and I loved it.

M’s car is screwed up, so we’re currently sharing my ride.  So he’s been taking me to work so he can go to school and then picking me up in the evening.  While it’s a bit of a challenge, it’s not the end of the world.  Not sure his car is worth fixing yet, so we’ll see.

It’s been really nice out (80 over the weekend, chilly yesterday, but 70’s today and 80’s tomorrow before winter comes back and we’re in the 50’s).  We’re definitely taking advantage of THAT!  Kuma has been hard to keep inside, and Bumble has been joining her in the yard too.  Ginny sticks to her window watching and is just happy the house is opened up!

So, hope you’re having a good week so far!

The Happiest Place on Earth is Home!

FOOD

Still mostly eating in vs going out to eat (with the exception of the last week where I was traveling).  I’ve been largely batch cooking on the weekends and eating leftovers through the week.

I’m still doing a lot of the Happy Herbivore meals, but have had a few fun ones thrown in.  Like this one!

Crissie’s Kitchen Sink Red Thai Curry

Ingredients

  • 1 packaged extra firm tofu, drained, pressed, and cubed
  • 1 head broccoli, chopped into small florets
  • 4 carrots, diced large
  • 1 red bell pepper, diced large
  • 1/2 onion, diced large
  • 1 cup frozen peas
  • 1 cup frozen green beans
  • 1 can lite coconut milk
  • 2 tbsp. red Thai curry powder or paste (brand of your choosing, I order from The Spice House)
  • 2 cloves garlic, minced
  • 2 tsp minced ginger root

Directions

  • Line a large skillet with a small amount of water and heat on medium high
  • add onion, garlic, and ginger.  Sautee for 3-4 minutes, until soft
  • add carrots and bell pepper.  Sautee for 5 minutes, stirring often
  • Add can of coconut milk + 1/2 can of water, tofu, and broccoli, and peas
  • Bring to a boil, cover, reduce to low, and simmer for 10-15 minutes

Serve over rice, quinoa, or any other grain of choice (or plain, like I had it!  More soup than stir fry).

I used up all the veggies I had lying around (I was heading out on a week-long trip, so that was important), and the fun thing with curries, is you can use whatever you have.  Cauliflower, cabbage, brussel sprouts, corn, etc.  Doesn’t matter – it’s all yummy!

LIFE

Been a busy, but great two weeks.  New (and final) term for grad school started!  Lot’s of focus on entrepreneurial  processes, and it’s been really interesting so far.  As much an art as a business science.

R had her second peanut flour updose!  She’s now at 6% of 1 peanut.  Words cannot express how proud I am of her for doing this.  Her bravery shocks me – she knows how life threatening her peanut allergy is, yet this treatment protocol, if successful, will forever alter her life and take away that fear.  The process is a bit anxiety producing though.

I went to a conference for work in Orlando.  It was a really good show, but my favorite is always the volunteer work with military veterans who have recently or are soon to be transitioning.  It’s less about healthcare IT specifically and more about the culture shock.  For those in a long time, it’s learning to STOP using some language and terminology that doesn’t translate into the corporate world and to understand leadership nuance differences (such as people don’t do what you tell them just because you tell them!).  Nothing like that existed when I transitioned out of the Navy, so I love doing this for others.

I also took a side trip to Epcot and had a great time.  And while it was a great trip, the happiest place on earth is really just being back home!

  • 1 cup rice (doesn’t matter the type – I wanted brown, but am apparently out and used Arborio instead)

  • 2 tbsp. red Thai curry powder (here’s the one I use)

Yes – it was the once a year charity golf event!  Both D and I want to actually play regularly, but I need to graduate first.  There’s so little free time as it is, so starting something new just isn’t in the cards for me.  Still – we had a blast (playing with our usual couple!) and I was literally sore for days!

LIFE

Big surprise – it’s been a wild week and a half!

First off, it’s Term 4 (of 6) exam time from Oct 7-22, so if possible, I’m even more head down and buried in my studies.  This also means I only have 2 terms left!!  WOO.  I have 5 courses per term, and each course typically has a 5 hr. exam.  There was an exception with one being a bit shorter.

Last Friday was golf, so that was an all day event.  Saturday morning I hit the road for work.  I got to see JN twice and have dinner with EA the night I arrived!  They’re both classmates.

Friday night (last night) was working on a group submission for one final (which also incorporated a significant amount of French wine, puppies, and a fire pit).

Today I took 10 hours worth of exams.  I’m surprisingly NOT as brain dead as I thought I would – though I am going to head to bed soon!

Tomorrow I’m taking what I think may be my toughest exam.  I doubt I’ll sit for more than one, so I will take my remaining final Monday night.  It gets me done 5 days early (which is nice so I can start to prep for next term), but mainly my goal is to not have any exams hanging over my head come my birthday on Wednesday,

Other than that – typical pics of cats, Kuma, the Morning Pictures, and any other random pics snapped!

Friday D and I have a charity golf event, and then I’m traveling for 5 days to support that project I mentioned.  Of course there’s the whole hurricane Matthew thing brewing, which thankfully appears to be turning east of Virginia Beach, but we’ll still get rains and winds.  After last months flooding, that means our region is still in danger of falling trees and flooding – so here’s hoping everyone in Matthew’s path stays safe and dry.  Oh, and this Friday also begins our 2 week exam period.  It’s going to be a chaotic couple of weeks!  But what’s new, right??  🙂

Compatibility

So I have to say that I’ve been increasingly concerned that blogging is incompatible with my life!  Which – frankly sucks because I’ve always loved it so.  So – I’m not willing to give up on it, but I do apologize it’s been so scarce!  Between a full-time demanding job, a full-time demanding grad school program, a busy family, and life in general – it get’s tough sometimes.  But…I’ll keep blogging when I can and hope it gets more frequent than it has been!

FOOD

To be honest, I have not spent nearly enough time in the kitchen of late.  Another things I feel has been sacrificed to the grad-school gods!  That doesn’t mean there aren’t good eats though 🙂  Life is too short for icky food!

Here’s a few things I’ve noshed on in the past couple weeks.

Re-joining the Y has been a really good thing.  While I still prefer to run outside, it’s a nice alternative when I can’t.  I’ve started going 3 days per week to weight lift and either run there or at home.  It’s not as consistent as I’d like yet, but so far, so good!  I’ve taken a few classes too, but group exercise classes are rarely my favorites!

LIFE

Well you know.  Work.  School.  Family.  Puppy.  Those all take up most of my time 🙂

Can’t complain about any of them though.  My current term at school is wrapping up and we head into exams next weekend.  Lot’s of projects, papers, and cases to fill my evenings.

Work has been steady, but not overly crazy – which is nice.  Had one quick work trip since I’ve gotten back from China, but it was just an overnighter.

Family has been very great.  M and A are both moving up in responsibilities at work, which is great for them.  A is also doing great in her very own apartment and balancing that, work, and school.  R finished up 7th grade just yesterday!  D is always pretty awesome, and everyone has been healthy.

Kuma is a total sweetie.  She potty trained quickly to the bells on the back door, and she’s wicked smart.  Stubborn too, but that’s why she’s in puppy school!

Ending with pics!

I did have one food fail, though I take no immediate blame 🙂  I wanted a fresh loaf of bread, and it came out hard as a rock.  I think my bread machine may be dying.  It’s old though, so maybe it’s a natural death.  The last several loaves I’ve made in it weren’t great – but if I use the Kitchen Aid and bake it in the oven, no problem.

FITNESS

This is my favorite time of year to run.  I know it’s hot, but considering how much I hate being cold, it really doesn’t bother me.  It is getting to the point where I’ll have to be better about wearing water belts though!

Sunday’s run in particular had me very hot and sweaty!  It got up to almost 90, but it was still only in the high 70’s/low 80’s when I went.  There was a light breeze, so it was actually very enjoyable.

I find that it’s when I STOP running that I become a sweat bomb.  Or perhaps that’s just when I notice it.

That’s when the pool comes in totally handy though 🙂

Other than that, it’s been mostly body weight workouts.

LIFE

I had one of those perfect weekends.  The one’s where the weather is perfect, the company is amazing, there’s things to do (but not TOO much), and things are just glorious.  It was the first really hot weekend, the first weekend our pool was open, and I seriously can’t complain.

Friday night, D and I went out.  We don’t go out all that often (honestly, we can have fun in a paper bag, so we’ve never needed “date nights” or things like that), so it was really nice.  We went to an Italian place, had a couple drinks and appetizers, and just hung out.  Talked about life, the future, politics, sports (I know…baseball was on and he loves baseball), and nothing in particular.

Saturday was all about food!  It started with A and I going strawberry picking, then she went to spend the day with her boyfriend, and I hit up the farmer’s market circuit…then came home, popped in headphones, and made stuff!

Yesterday was A’s 20th birthday!  So crazy that my little girl is 20.  After birthday breakfast, it was time for some pool fun.  Then she was off with one of her oldest friends for an afternoon of antique shops (yes, they love antiquing), and then home for her requested dinner and presents.  She got a new stereo with a turn table – so excited.  Some records too (Beatle’s Yellow Submarine, Pink Floyd – that was D, and The Clash – that was me!).

We received a package this weekend (coffee order), and each time I walked past it, one of the cats was in it.

While she was gone, I pretty much spent the entire day outside either in a lounge chair reading, or in a pool floatie listening to my iPod audio book.  As soon as D got back from running errands, he popped in the pool with a book and floated around too!

Today was business as usual, though perhaps a bit pink.  See, for all my outdoor glory, I forgot to wear sunscreen.  I’m crispy.  Even the insides of my ears are burned!

It probably was comical that I had picked out an outfit for today with a pink top.  It was almost like wearing camouflage!

Otherwise, today was a pretty good day too.  After work and school, M had a bunch of friends over to swim and watch TV.  A’s boyfriend came over for a bit too, and everyone had a relaxing evening.  Everyone except R, who isn’t feeling well.  She has a low grade fever, and I’m worried she’s catching the same allergy-induced sinus garbage I had two weeks ago.  I hope not – and that it was just too much sun and not enough hydration – but we shall see in the next day or so.

Until then, morningpictures!

FITNESS

Quite literally, the only workouts the past two weeks have been runs.  It’s all I’ve had time for.  Luckily, I’m pretty much okay with that!

LIFE

You know, I think time is a tricky thing.  It goes by so quickly when you’re not paying attention!  Two weeks is a long time between posts, and I’m sorry.  Between D working nights, me getting a ridiculous sinus/ear infection (completely lost my hearing in my left ear for almost 2 days – freaked me right the heck out), a last minute work trip, and regular life….it’s remarkable how fast the time flies.

Mother’s day was nice – though we should have checked the weather for that whole “tropical storm” thing.  Alas, we went to the theme park anyway, managed to get one roller coaster down – before the sky opened up and the storms hit!  Seriously though, it was still a great time.

When All Else Fails, Kill Them With (Vegan) Comfort Food!

Because of the whole surgery thing, still can't workout – so I'm not bothering with my normal layout.

Yesterday was my oldest daughter's 19th birthday! I think she overall had a very good day, some spent with family, some spent with friends, some of it on the beach, playing mini golf, and just being a normal teenager.

For her birthday dinner, A asked for a Tofurky roast, and I was more than happy to oblige! While I made that in the house along with a quinoa/brown rice/garlic grain dish, D whipped up his grill master skills and made corn, broccoli, portabello mushroom caps (marinated in broth, balsamic, and garlic – my fav combo), and asparagus. Everyone agreed that dinner was epic.

We always make homemade birthday cakes (because of R's nut allergies eliminating bakery options mainly), and this year was a strawberry cake with fresh pureed berries. It was really good.

After my blog post yesterday, a Twitter friend commented that perhaps I forgot what it was like to transition from a standard American diet to a vegan one. I didn't just jump into loving kale and green drinks – it was a much slower progression, often recreating my fav foods and comfort foods before I found my “healthy” dishes. So even though last week was good, I focused on creating a meal plan this week that's going to be more familiar for D and the kids.

So here are a few things I whipped up today.

While I started my day with a green juice (that was just me!), I made pancakes with fruit for everyone else. R had apples, A and M had grapes, and I had watermelon. D slept through breakfast, so he just missed out entirely 🙂

Lunch was a pita stuffed with tangy grilled tofu (which D whipped up last night), avocado, red onion, and lettuce. And a baked mac no cheese that everyone loved.

I also made some fresh bread for lunch sammiches this week and some homemade pesto from a basil plant in my kitchen.

Dinner was a pizza party! We've always done homemade pizzas, but tonight, we did a total of 5 smaller ones so everyone else can see how awesome vegan pizza can be! Here are the results:

BBQ chick'n pizza! Barbeque sauce, fresh chopped pineapple, and some Gardein Chick'n Scallopini breasts, thawed and chopped. This was the overall family favorite.

Vegan Margherita Pizza with fresh pesto! Tomato sauce, pesto, Daiya Mozz shredds, and thinly sliced roma tomatoes.

Super Veg! This is MY personal favorite. Tomato sauce, crushed red pepper, Italian seasoning, garlic, broccoli, artichoke hearts, tomato slices, red pepper slices, black olives, and carmelized onions (which I made with some sucanant and balsamic).

Veg and Cheese was pizza option #4. It was a combo of 2 & 3, with some Daiya and a few less veggies, but with pineapple!

And finally, pizza 5 was a repeat of #1, but with Gardien Chick'n Tenders instead of the scallopini.

Everyone was happy and stuffed today – so for that, I'm greatful to @_ivegan for the great tips yesterday!

The rest of the day (when I wasn't cooking) was spent in bed. Quite frankly, I over did it a bit today, and am paying for it now. What can I say…I don't “rest” well.

Here's hoping you all have a great week! Our will be filled with some vegan comfort foods, that's for certain. And while it's not kale, it's still all much healthier than the standard alternatives – and that makes me incredibly happy (not to mention, no beings came into harm in the making of these fantabulous meals!).

Time Flies and The Dinner That Wasn’t

FOOD

It’s been a fairly typical food scene around here the last two days, with the exception of dinners.

Dinner yesterday didn’t happen, and I ended up going to bed with a wicked headache.   Dinner today was supposed to be grilled fun – tofu, broccoli, and a salad…but my kids decided to sprout social lives, so it ended up being a quesadilla, baked spud, and a sunflower butter/banana sammich.  I feel a bit cheated!

FITNESS

Yesterday I didn’t work out.  Way to busy, and didn’t get the chance after work – and frankly, after all the travel drama and little sleep, I sure as heck wasn’t going to get up early!

Today though, I was sure to pack a gym bag before leaving the house.  An after work jaunt to the gym was in order, and I did some HIIT on the elliptical and some full-body weight training.  One of these days I want to like going to the gym.  I dislike workout DVD’s though, and I’m back to pouting about just wanting to run and not being able to.  Driving to and from the gym and parking takes time I don’t have to waste if I could just lace up and walk out my front door.  So here I am, feeling whiny again, sorry.  Maybe tomorrow I’ll finally get the spiders off my bike and go for a ride.

LIFE

Last night my son had a play.  It was called Time Flies, and it’s about 2 mayflies who meet, flirt heavily (that was hard to watch as his mom while one may fly grabbed his butt), and then learn by watching a TV special that mayflies only live 24 hours.  It was pretty hilarious and he’s up for an award for his performance!

IMG_4331 (Small) IMG_4342 (Small) IMG_4348 (Small) IMG_4358 (Small)

The night went much later than planned, so we didn’t get home until late.

Today was all meetings, all day.  I do feel like a lot was accomplished regarding one of my projects, so I certainly am not complaining about meeting hell or anything 😉

My oldest child was called and offered a shift at work tonight, and my son was invited to an overnight bowling party-thing, so we ended up not doing the dinner we had planned.  We did all sit outside and goof off for a while (basketball, soccer, beer…well…beer for just D and I…but still).  I’ve been rejoicing in the ridiculously hot weather and spending as much time as possible sitting on the deck under the big umbrella.

my view from my chair

my view from my chair

Tomorrow I have two things planned, though one may not happen.  My daughter and I (the oldest daughter) signed up for a Chesapeake Clean the Bay Day – which is a VA and MD-wide effort to clean up the waterways.  I signed us up online and the local coordinator was supposed to email me with details on where to go (I have no idea where I’d been “assigned”, other than my city), so unless it comes by the morning, I may not be volunteering after all.  Which has me really bummed out…getting more involved in things that are important to me; animal rights, social justice issues, and environmental initiatives, is something that I took home with me from VVC (Vida Vegan Con in case you didn’t know).  I won’t let this keep me from becoming involved in (or starting) activism in my area, but it still bugs me.

Tomorrow evening I’m going to our Vegan Dinner Social and Pleasure Club meet-up group!  We’re doing a Wine and Cheeze Garden party.  Since most vegan cheezes are nut based, I’m bringing a fruit plate, flax crackers, and possibly a sunflower seed spread.

Sunday, if the weather holds, D and I are going golfing.  Real golfing – not lessons or driving range.  I’m hopeful that we go.

Until then, random pics of Sammie the happy pooch and Bumble, the Ruler of the House.

Nothing But a Circus Around Here

FOOD

Okay, so I’ll have the obligatory pictures of yummy eats in a second, but today I want to talk about the lessons I’ve learned from food in the past month or so.

First of all, my joint pain is all but gone the past two weeks.  I had some soreness in my right hand when I had to do a bit of handwriting one day (laptop battery died and I forgot my iPad, so I was forced to go the old-fashioned way – pen and paper!).  But that said – it was only very mildly sore, and nothing like the locked up and unable to move and severe pain that I’d been having.  Aside from that one episode, my joints have been great.

What does this say to me?  It confirms my very strong belief that food is the ultimate medicine.  You can harm or heal your body through food.  You can eat yourself to death and disease, or to health.  I will put the caveat that there are circumstances where food has little to nothing to do with disease, but I don’t think a good clean diet can ever HURT you the way a bad diet will always hurt you.  Take me for instance.  My autoimmune condition is genetic, yet my food choices are helping me manage it drug-free.

The hives are still hit or miss.  It’s nowhere near as bad as it was back in January/February, but I still get boughts of them that are extremely itchy and uncomfortable.  Here is what I’ve learned about that…

Hives, first of all, are a histamine reaction and we’re not exactly sure why I’m having them.  Could it be related to the joint fun?  Maybe.  Is it allergies to foods or environment?  Possibly.  Does anyone feel confident they know why I’m getting them?  Hell no.

I’ve had days where I don’t get any.  When looking at my food journals, those are the days I ate the cleanest with mostly or all raw foods, limited caffeine, etc.  If I slip up and have something with gluten (like today), I will get some intense hives.  I can’t make a positive correlation yet, but I think there’s a connection to foods causing my hives.  I’ll keep watching it.

Oh, and ice packs are the best thing I’ve found for the hives.  Showers and any heat make them worse, creams don’t help (they make it worse by trapping in body heat).  So for your future reference if you ever find yourself with a back full of hives – ice it.  Trust me.

Okay.  Pic time.

FITNESS

It’s been a very hectic week, so getting in my workouts has been an experiment in time management.  Early morning yoga at home with one of my Yoga Today videos and Zumba on the Xbox have been the order of the week.

I did make it to a spin class with AZ this evening after work.  It was ok….I wasn’t the sweat ball I normally am, and my calorie burn was only 300 for 45 minutes, compared to the 500+ of the past few.  If my butt and leg muscles are sore tomorrow, I’ll feel like it was a good lower-body strength session more than any cardio….oh well.

I see my trainer tomorrow morning.

LIFE

The big life stuff the past few days have been about my oldest daughter.  First of all, she’s turning 18 tomorrow, but that’s a whole other post!

I’ve mentioned before that she’s an artist – her specific medium being fashion.  She had her Senior Show this past week, and quite frankly, all of my energies have been there.  Everything came together in the end, but I’d be lying if I said I wasn’t worried that it would all fall apart!

The show was inspired by the circus, and all of the outfits represent different circus things – there’s an elephant, lion tamer, ring leader, big tent, acrobat, poodle, clown, and a mime.

She had eight models (friends) and three “helpers” during the show.  She produced all the art work and outfits, choreographed everything, selected the music, etc.  The rest of the family helped do everything else!  Catering, moving walls, communicating with parents, hosting a “fitting party”, helping find a photographer and videographer, and basically keep her on track (yes…we made a color coded project plan).  It was insane and amazing, and I’m incredibly proud of her.

Believe it or not – we took VERY few pictures.  There was a photographer and videographer documenting the whole thing (local community college students – keeping in theme that this was a student show), so we were mingling and keeping everything together.  Here are a few, but they don’t come close to capturing the show.  Perhaps I’ll post more when we get the files from the show.

we had to rent a Uhaul and pick up 5 false walls so A could create a runway and have walls to hang her art. And then take them back. All in the same day. And they're heavy.

Other than that, sleep and relaxing are the goals for the next few days before life gets hectic for other reasons (like traveling, graduation, more traveling, and the whole “shipping a kid off to college” thing…..).
