Last couple have days have been quite yummy!

Sunday evening I went to one of my fav DC spots – Thaiphoon – in Dupont Circle for my always fav tofu green curry.

Monday morning I just grabbed a bagel at my hotel before heading for a coffee meeting.

Lunch was at HipCityVeg in DC! I’d wanted to go there for years, and was so excited. I had the kale lemonade and the jerk chick’n salad. No dinner since it was spent driving – didn’t really work up an appetite. My lunch partner had the udon salad – I took a pic because it is vegan after all, and it was the other dish I was eyeing.

Tuesday morning was a smoothie with Ripple vanilla protein powder, banana, spinach, and blueberries.

Lunch was some roasted tofu then tossed in a stir fry with a yummy ginger sauce I saw in The Abundance Diet book. It was a little too salty – it did call for 1 tsp in the sauce. I’d cut that down ton 1/4 tsp if I make it again. I tossed in some cooked quinoa too.

And because yesterday was Tuesday that means tacos! I made Arroz Verde and a tofu filling. I took a can of diced tomatoes, 1 chili, and 2 tsp of Penzy’s Salsa & Pico seasoning, and blended it. Pan fried the crumbled tofu with onions and garlic until starting to brown and then poured in the tomato sauce. Once it started boiling, turned it to simmer until all the liquid was either absorbed or evaporated. Served with shredded lettuce and homemade tart soy yogurt and hot sauce.

This morning I finally got to use my juicer! New part worked like a charm 🙂

That was followed up by a hearty breakfast salad a couple hours later.

And, perhaps, strawberry-jalapeño margaritas were had…(well, one was just strawberry).

FITNESS

Did two spin classes so far this week. Thank goodness for Peloton!

This evening I’m planning to run outside! It’s a beautiful day, and the first in a long time where I’ve felt like running.

LIFE

It’s been a really great couple of days.

Sunday I was at an all day UVA sponsored workshop – which is the reason I was in DC to begin with.

Monday I was still in the DC area. I had a 9am coffee meeting with a fellow UVA Darden Alumni. I do have to say that our network is very, very strong and I love that. We’re always looking out for each other, expanding our networks, etc. That alone is pretty much worth the price of tuition.

Speaking of, on Friday I had lunch with a current Darden student who is interested in my industry (healthcare emerging tech). It was nice getting to pay it forward and put him in touch with resources to help him.

Lunch was with an IBMer I met about 6 weeks ago. She was down in my neck of the woods where I was giving a presentation on Innovation. A couple weeks later she emailed me wanting to get together, learn more about being a successful woman in the tech industry, and since I was heading to DC, decided to make a lunch of it. She’s 22 and really at the early stages of her career, but freakishly smart and driven and I had a great time with her.

Monday was work and then grocery shopping on my way home. I was in dire need of grub in the house!

Oh, and because I don’t have enough to do, I signed up for a mobile app development certification program! I got a wicked discount on it, and that started last night. It’s two nights per week for the next month. I’m excited. Doing a web dev program after that 🙂

Since I have startup ideas that would require those skills, figure it can only benefit me to get them. Besides, no white out on a resume – the more skills I have, the better!

Tonight I get to put together a guest lecture for a local university tomorrow. I had thought the person who originally asked me forgot since I hadn’t gotten any info from him. Alas – at 4 he emailed me. Ugh. Guess I need to do this.

Meet The Family!

Usually when I have a break between terms I spend a lot of it in the kitchen. I haven’t had a chance to do that much, but I’m hoping I can in the coming week since my courses start again on the 5th.

So I’ve been inspired to get back into juicing. Finally picked up How Not to Die, and it makes me really miss it (both not dying AND juicing!). Of course I have a slow juicer (Tribest Slowstar), but it’s always leaked a bit, which is why I stopped using it. So after doing some research, found it’s a known problem. I contacted Tribest (even tho I bought this juicer in 2014, it has a 10 yr warranty), and they’re sending me the replacement part for free!

Until then, it’s occasionally buying juices until I can make my own.

Other eats include Thai, of course. And salads, soups, meals out with my guy, and a lovely solo dinner in downtown Norfolk. Plus dinner in the DC area last night.

Even tho he’s not a veg head, we have similar tastes in food. Indian is always a good option!

Had a couple cheater smoothies this week. Didn’t make any myself, but still had a couple!

Couldn’t fit in any Regymen classes, but did get in yoga and spinning. This weekend has been quite a bit of walking too.

LIFE

Even though there’s been no school, it’s been a busy week.

Last Saturday was a fund raiser for my daughter’s orchestra group at the Norfolk Admirals hockey game. When I was in Boston she asked if we could go. Of course! Transferred her $$ to her card so she could pick them up. I get home, and she tells me (very excitedly), that her best friend can come! Thing is – she bought 2 tickets. SO….I scooped the girls up, took them to the arena, and then walked around, ending up with dinner solo at Leone’s. No worries tho. Pasta, wine, and a book, and I was very happy.

Sunday morning I went over to my boyfriend’s house for a bit. Then we went out to lunch, and then I met his family for dinner. No pressure. Actually it was really low key and everyone is really sweet.

Being on a school break means more reading for me. Aside from my fun fiction books on kindle, am working on these 3 too. Just because it’s break time, doesn’t mean I don’t feed my brain.

The rest of the week was work and kid stuff, though went out Thursday night with my guy.

Friday I dropped R off at school – she has a robotics competition out of town that her brother and friends are going to cheer on – because I’m in DC for a long weekend. Had a stop in Charlottesville for a meeting, then up to DC, where I have some events until Monday afternoon.

Some very typical eats – smoothies and salads namely. I did try out a new protein powder. I really love the nutritional makeup of it, but am not in love with the taste compared to Vega or Garden of Life. So we’ll see if I ever get it again or try another flavor.

Tuesday night was the full blended family dinner fun out for Mexican. Many sangrias were had 🙂

For the rest of the week, I was in Boston, getting home late last night/early this morning. All I can say is thank goodness for Clif Bars since there really wasn’t anything I could eat on the first day. Once the coordinator of the meetings I was in learned I was vegan, she really went out of her way to help ensure there was something to eat for me (even soy milk for my coffee the second day we were there!).

Wednesday evening I met up with A & L for drinks at the top of the Prudential Tower at a place called Top of the Hub. We didn’t eat, but the drinks were amazing.

Dinner was as Kashmir – and Indian place that A and I actually went to almost a year ago the last time I was there. We ordered a bottle of wine, two orders of samosas, and 3 dishes to split. All vegan because they’re wonderful.

FITNESS

I got to one Regymen class, and it kicked my a$$. Focus was core, and I was sore for days!

Several other days I did Peloton streaming cycle workouts in my home gym.

LIFE

Tuesday evening was dinner with the 7 of us. BS helped me with my first ever basketball bracket! I have 3 total. One that is all him, one that is mostly him with a few changes (just couldn’t make WI lose – though I should have because they did!), and one that was actually a Wall Street Journal analytics one. I’m currently in 1st, 2nd, and 3rd place! Though my 3rd is tied with my girlfriend A up in DC. My 1st place is my WSJ bracket, 2nd is the slightly modified one, and 3rd is BS’. Still a bit to go, but it’s been fun and minorly obsessive to check rankings after each game.

Most of the week was in Boston for my first trip there this spring. Two more to go. I left early Wednesday morning. Had a few afternoon meetings while I was there (one hanging in a Starbucks in Harvard Square), and then met with A & L (A and I went to grad school together. L is a professor in Boston). I hadn’t seen A since last summer, and L since a ski trip a little over a year ago, so it was awesome to catch up. Both are coming for a visit this summer, so that’ll be awesome.

Thursday and Friday were meetings, which were really engaging and productive. We had a dinner that Thursday night, which was a lot of fun. It’s always nice getting to know people you really only know via phone calls! Lots of non-work related interesting conversations, especially about food and travel.

I flew home yesterday.

Today I went to Whole Foods and then met my boyfriend and his oldest for lunch. This evening is taking my youngest and her bestie to a hockey game. It’s nice being busy. Not having school work to do won’t get to me 🙂 I have read quite a lot though, which I really enjoy.

So BS admonished me again. I did tell him to bite me because I had a 40 page paper due and that was more important than his blog fix, but whatevs. Paper is done and now it’s time to catch up!

As you can imagine, there has been plenty of food in the past 2 weeks! Thai, soups, salad, smoothies. You know – the typical. And eats out and about too of course!

FITNESS

The past two weeks have been too chaotic to go to the gym. Good thing I have a small home gym with a spin bike – been quite a bit of that!

And yoga, of course. I’d probably burn out without it.

LIFE

Very busy couple of weeks! Went out of town with my guy a couple weekends ago. Great trip about 3-4 hrs away from home. Got back on Sunday – realized I left my wallet at the restaurant where we had breakfast, and proceeded to drive back to get it. Ugh. It was 7pm by the time I got there and raining, so I just spent the night and came home early in the morning. What a pain. Otherwise a wonderful weekend.

Then it was a normal week of working, working out, studying, and going out one night with my guy – typically a Friday night.

The following weekend was an almost full family movie fun with Captain Marvel (A wasn’t there – her man was in town!). The next day was a brunch party at our fav brunch spot to celebrate A & J. Minus my son who was working and one of my guys sons who had pre-existing plans, and plus two other friends. We reserved the tea room, ate, drank, and laughed a lot. It was a lot of fun.

Then more work and school. My girlfriend H from Richmond was in town for a few days (she grew up here and was here for family stuff). We went out Tuesday night.

I took off Wednesday to focus on my paper. Library, then Brick Anchor for lunch, then Starbucks, and then meeting S from Boston for dinner and drinks.

This past weekend was all about robotics! R had a competition locally and was a ton of fun – though two 12 hr days is loooong. My guy came to some of it both days and that was fun. R was student ambassador so had to work shifts giving tours and explanations of the program. We were her first she gave tours to, so it was cute.

My term ended yesterday, so I’m done until April 8th. Here’s hoping I don’t get too bored…

Has Anyone Seen My Lung?

Good grief, nearly 2 weeks! Surprise BS hasn’t admonished me lately….as an FYI, I was sick, so there wasn’t much to chat about!

FOOD

Lots of smoothies – pretty much every day. Including the one I’m drinking now 🙂

Salads, Thai, Ramen, wraps, and risottos. Also had my kids plus my guy and his over for dinner last weekend. Zoodles, beyond beef crumbles, and marinara was amazing! Also made a huge batch of Jambalaya from the Forks Over Knives cookbook. One note about it – recipes are scaled to feed crowds – so for the first time, I actually couldn’t get through all the leftovers!

FITNESS

The first week I was home I had a cold. Literally the morning after landing from Orlando. Since it was upper respiratory and sinus related, it pretty much ruled out any workouts.

This week though, I feel fine and hit up Regymen again. Thought I was going to die at one point (still had a mild cough and I may have left a lung at the gym). Also my bike in the garage while watching my iPad!

And as always, worked in yoga several days.

LIFE

Well, the cold was a pain in the butt to be honest. I have no time to be sick! Fortunately with the neti pot and rest, it went away.

I had an IBM thing the first day I started feeling human again. I’d have worked from home if not for having to present. But it was a really great time and they hosted an event that evening with drinks and apps. Best thing about that day? As I was getting ready to start talking, I noticed a woman in the room that I knew. She was the first CIO I ever had back in Milwaukee! Literally the woman who plucked me out of working clinically in the hospital and gave me my first IT job. I mentioned it before I started my part of the discussion. My CMO (who I was there with), actually walked over to her to shake her hand and thank her for putting me on this career path. It was really humbling when she gave me a hug at the end, and we spent some time catching up at the evening festivities. Definitely a highlight of the past two weeks.

There was a weekend trip last weekend that was literally the best 24 hrs I can think of ever.

I was on the road for a week, so not many homemade eats since my last post! I didn’t get pics of everything, but breakfasts were mostly oatmeal and fruit and sometimes toast. I managed a smoothie one day and I thought I was in heaven.

I was at the airport a bit early, so it was fruit, breakfast potatoes, and a mimosa!

Sunday afternoon/evening I went to Epcot (you know I can’t pass that up when in Florida!). Other than drinks, I got what I always do at the Tangerine Cafe in Morocco – falafel, hummus, lentils, olives, couscous, and tabbouleh. It’s their veg platter and it’s yummy.

Hahaha. Does hiking all over Orlando and the convention center count? If not…well…then nothing!

I will say I was WAY over my step count, and averaged 5 -7 miles of walking per day.

Glad to be home, and when this stupid cold passes, excited to get back to Regymen and yoga!

LIFE

Well, I was in Orlando for the week for the HIMSS conference. Honestly, it was an excellent conference this year. I had 3 speaking engagements, tons of meetings, a lot of valuable sessions, plus our inaugural booth where we launched 3 products/services. To say it was busy is a major understatement.

Of course, there’s always a blend of a lot of work and quite a bit of play too. Vendors always want to treat you to fun evenings, and that certainly happened.

My quick recap –

Saturday was around the world in Epcot. Sunday was Universal City Walk and some mini golf.

Monday night was a women’s innovation dinner that was actually really great. Then met up with friends for drinks.

Tuesday was a show at a place called Mango’s. Lot’s of singing and dancing and it was a good time. My girlfriend KB lives in Orlando and she was my date! Hadn’t seen her in about 3 years, so it was a ton of fun.

Wednesday was light on the festivities. Went to happy hour to support a friend who is with a new company, but then left to head to Disney Springs and do some shopping and grab dinner. Needed a quiet night.

Thursday was the last night there, and we went to the Orlando Magic basketball game. That was a TON of fun and got to catch up with more friends I hadn’t seen in 2 years.

Friday’s flight wasn’t until 455pm, so there was plenty of time to relax at the pool. What I didn’t really pay attention to is the way the sun was falling on me. Only my right side. So – my right arm and leg got a bit of sunburn, while the rest of me didn’t! All is fine now – but I do have a few more freckles on that side of my body!

Friday I came home. My best friend AC arrived from New Orleans about 20 minutes before I landed. So I scooped her up and my guy met us for wine and dinner. My oldest had to work (she works nights), and was leaving right after work for DC and not returning until after AC had to go, so I was instructed by my daughter to bring her aunt AC to the hospital – with food 🙂

Saturday AC and I went to Thai for lunch, then I took her to BackBay Farmhouse brewery, where my guy met up with us for a few drinks and hanging out. Then it was back home and showered for the whole reason AC came this weekend – Kathleen Madigan comedy show. And it was HILARIOUS. After we stopped at Yard House for a drink and apps.

Sunday morning we were up early and to my fav brunch place – the Bee and Biscuit. Then it was off to the airport to drop her off, and me heading back home for a nap and then writing a paper.

Busy busy week! Unfortunately, I came down with a cold this weekend. Woke up Saturday with a sore throat and stuffy. Pushed through, but I think I just need some serious rest. And Sudafed 🙂

On a side note, I really really love sugar skulls. So while at Epcot I did pick up a new water bottle with them on it, and a thing for my desk. AC – who rides in the Mardi Gras parades – made me a purse with one on it – in purple – and it’s the absolute best!

So, it was a good week and a great weekend – but I’m happy to be home. Need a bit of recovery to feel 100%, but that’s okay too.
