Mostly simple eats like smoothies, stir fries, and salads. Shocker, right? But when I want to make a salad a little heartier, I like to add grains and beans too. Early in the week I made a simple bulgur wheat salad to add to my greens instead of a dressing. SO good. It would be easy to sub the bulgur for quinoa or rice – pretty much any grain you’d like.
Crissie’s Simple Bulgur Salad Topper
- 1 cup bulgur wheat
- 2 cups water or veggie broth
- 4 ounce can sliced black olives
- 1 can chickpeas, rinsed and drained
- 1/2 diced red onion
- 1 diced bell pepper (I used an orange one)
- 1/4 cup olive oil
- 2 tbsp dijon mustard
- 1 tbsp rice vinegar
- salt & pepper to taste
- Bring the water/broth to a boil. Add the bulgur wheat, stir, cover, and move off the burner for 20 minutes
- Blend the olive oil, dijon mustard, and rice vinegar into a dressing
- Toss everything into a bowl
And tonight’s simple dinner of simmered tofu in a seasoned broth, spaghetti squash, broccoli, cauliflower, carrots, and brussel sprouts.
We’ve finally dipped below triple-digits and I could run while the sun was actually shining!
The week started out hectic due to nutty storms stranding D half-way home from his weekend away. Otherwise a relatively normal week of work and school and family.
This past weekend was mixed. I was supposed to visit J and meet baby J on Saturday! Unfortunately, I wasn’t feeling well so we’ve had to reschedule.
Sunday, however I woke up with the headache gone and the day lived up to it’s sunshiny name! D and I went boating with M and R. In all the years I’ve lived in the Virginia Beach area, this was the first time. Totally crazy, and awesome. Of course not getting a boat some day is on the to-do list.
Kuma is a bit of a nut job lately, but still cute. She goes through freakish bouts of energy and she can be a holy terror. And then she’s snuggly, smart, and funny. My favorite is how much she looks at me like I’m nuts when I get up in the morning. I reach for her to take her downstairs with me, and most days she just inches closer to D and turns her head away to tell me it’s clearly too early to be bothered.
But of course, yesterday was International Cat Day, so….
