Food Coma for DAYS


While I could take the time to tell you about my green smoothies and pumpkin/lentil sloppy joes, but honestly.  Yesterday was Thanksgiving, and nothing else can really compare to that yearly feast!

It’s funny how I can spend hours and hours cooking, to have everything eaten in 10 minutes.  Alas, here was yesterday’s menu:

  • Tofurky (of course!)
  • roasted balsamic brussel sprouts
  • green bean casserole (made with homemade spicy mushroom soup)
  • roasted carrots and onions
  • rolls
  • mashers
  • mushroom gravy
  • risotto with sage
  • corn


And guess what I had for breakfast today??? 😉


Happy to report that I’ve gone for a run every other day for the past week.  I’ve been incredibly lucky on the weather front, and I’ve been enjoying the runs.

I leave in a week for Brazil, and hope to keep running while I’m gone (in the hotel).


It’s been a pretty low-key work.  With it being a holiday week, it’s been pretty tame at the office.  Term 2 for grad school has started, and I’ve been dedicating pretty much all of my free time to my studies.  To the point the other day that I was so punchy, I started tweeting bizarre econ jokes.

I’ll be in Brazil for 2 weeks (for school) and it’s freaking me out that it’s only a week away.  I’m excited, but more than a little nervous after reading the most recent State Department warnings.  D basically wants me to just stay at the hotel 🙂

M came home on Tuesday for the long holiday weekend!  It’s been nice having everyone home.  Today A is working (Black Friday in retail…I imagine she’s having a rough day!), and both R and M are having friends over for a “leftovers and chill” party.

And me?  I’m going to go for a run soon and then get back to the books!

It Feels Like a Normal Post!


Friday was a simple green smoothie of coconut water, spinach, hemp seeds, banana, and frozen pineapple.


Lunch was some leftover tofu stir fry that I had made on Thursday for dinner.  Super simple (and I have no picture, sorry!), but sauteed cubed tofu in a bit of coconut oil then added onion, garlic, red bell pepper, water chestnuts, bamboo shoots, and green beans.  Added soy sauce at the end, and served over rice.

Dinner was a potato burrito and some Spanish rice.

I had class yesterday morning, so I heated up some leftover cream of broccoli soup (a Happy Herbivore recipe from her Holiday’s and Gatherings book).

Lunch was pretzels and hummus (bad, I know…was studying and didn’t feel like cooking).

I did cook for dinner though, and have a recipe to share!  I made butternut squash risotto from a mix I picked up at Costco last week – by Manitou Trading Company.  It was a huge hit, so find it if you can!  Served with a mushroom and broccoli bake and Lightlife vegan Italian smart sausages.

Crissie’s Mushroom & Broccoli Bake


  • 4 cups broccoli – steamed
  • 3-4 cups quartered mushrooms (I used baby bellas, but any would work)
  • 1/2 medium onion, diced
  • 3 cloves minced garlic
  • 1 can (14 oz) coconut milk
  • 2 tbsp Earth Balance
  • 2 tbsp flour
  • bread crumbs (I used Italian seasoned panko)


  • steam the broccoli for about 4 minutes
  • put broccoli and mushrooms in a 9-in (or similar sized) baking dish
  • in a skillet, melt the Earth Balance
  • saute garlic and onion until onion is clear
  • add flour and make a roux
  • slowly add coconut milk and stir until a thick sauce forms
  • salt and pepper to taste
  • pour coconut milk mixture over the veggies and stir well
  • sprinkle with bread crumbs
  • bake for 30 minutes at 350 degrees

I’m actually thinking of making this on Thanksgiving – it’s been quite awhile since I’ve felt any creativity in the kitchen, and this recipe didn’t disappoint at all.

After class yesterday I went for a run before getting busy working on laundry and studying.  Not too far – only on Day 2 of the 10k training program!

Still, it was a nice day and at one point D drove past me (heading to the gas station to get gas for the mower) blaring Eye of the Tiger in case I needed some motivational tunes.  He’s so cute.

I also went ahead and signed up for the Shamrock 8k in March here in Virginia Beach.  It helps to have a race to train for, and I’ve been running the Shamrock for all but one of the last 12 years!


After work Friday was a retirement party for my CIO and then D and I went to AC and JC’s house to relax and hang out.

We have class on Saturday’s for half of this term – I think it’s to work around the holiday’s and to lesson our workload in our Brazil residency – which is just 2 weeks away!  So, I was up around 8 on Saturday, studied for a bit, had class from 10-1130, and then got back to studying most of the day (mixed with a few breaks for a run, shower, and laundry).

I’ve really been getting into candles lately, and a packaged arrived yesterday with three I had ordered!  Unfortunately, as I was taking the bubble wrap off of one of them, I lost a chunk of finger on broken glass 😦  Seriously, it bled for about 4 hours, and was seriously wondering if I needed stitches at one point.  What sucks too, is that it’s my pointer finger on my right hand – so the one I need for typing, using a mouse, and writing.  Ugh.  At least I’ll be exempt from washing dishes for a bit – and you can  bet I’m going to milk that for as long as I can!!  🙂

After dinner last night, I decided no more studies, and D, R, and I watched Die Hard!  She’s starting to get introduced to some of my old action favorites – like James Bond, John McLane, and next is Armageddon!

I went to bed fairly early, and the two of them stayed up and watched another flick.

Today’s plans are – meal planning, finish laundry, and study!

Why I Haven’t Blogged Lately

You know what’s funny?  It’s really easy to say I haven’t blogged consistently because life is nuts.  And you know what?  That’s not a lie.  It is nuts.  I’m a full time student, more than full time worker, and have a busy family of 5 – plus try to have at least some semblance of a social life.

The demands on my time can often suck and are almost always overwhelming.


Want to know the biggest reason I haven’t blogged?

The title.  RUNCRISSIERUN – sort of indicates that I run, right?  This is a vegan food, fitness, and lifestyle blog.  And I haven’t lived up to any of those well in months.  So I think I’ve been a bit embarrassed to blog, just to leave the “fitness” section blank…so…no blogging.

As I went for my first run yesterday in a shamefully long time, I got to thinking about the origin of this blog.  Without going into the drunken email part of the story (though it’s kind of funny), I started writing this blog to chronicle my adventures as I prepared to run the Chicago Marathon in 2010.  It was a lot of fun, and it kept me honest.

So after this post, I’m hoping you’ll join me as a re-kick-start my running life and healthy habits.   I’m doing the 10K trainer app from zen labs, and have made it through day 1.  Woo hoo!  It’s a start, right?

So with that, here are a few of my normal updates!


Too much processed crap and going out to eat, but a few highlights as well – like the big Indian feast on Halloween!  Anyway, not a lot off food pics as I haven’t had anything remarkable to share!

Well, other than yesterday’s run – none.


Well, it’s certainly no fib that the past two weeks have been insanely busy!  There was of course Halloween and R had her last legal go at trick or treating.  Our neighborhood really gets into it, and it was awesome to see the families out and about.

I also had my first round of grad school exams.  We’re given two weeks to take 4 exams, but once you start an exam, you have a time limit to finish them.  I won’t gloss over here – they were hard!  So from 10/30 when they opened until 11/14 when they closed, I spent a lot of time reviewing and studying.  Overall, I feel pretty good about them.  I know I did my best, and that’s all I can do, right?

And with no rest for the wicked, classes picked up again this week with 3x per week now (last term it was 2).  I honestly feel like I wake up, go to work, come home, hit the books, and then (sometimes) eat and sleep.  I’ve lost any sense of balance, an have done an awful job taking care of myself.  Anyway, hope that’s about to change!

Also in the past three weeks I’ve had 2 trips, though one got to include an investment conference, which was interesting!

My cats – especially Ginny – have become incredibly invasive when I try to study!  They’re cute – but definitely get in the way!
