FOOD

It's been a pretty yummy couple of days. Highlights were a quinoa berry breakfast with some blueberries and dehyrated strawberries I did on Sunday, and a bit of vanilla coconut milk yogurt and tonights dinner of colcannon (traditional Irish dish of potato and cabbage) topped with a mushroom gravy (both compliments of Happy Herbivore Abroad) and some smoked tofu. It was a comfort food fest, but just awesome. I also made her pineapple and bell pepper curry. It was so awesome – and quite spicy (D couldn't handle the spice level, which was funny since he's always been a hot pepper fan).

You may have noticed that I have been cooking a ton of HH stuff lately. I love her recipe books – she uses simple ingredients most people have on hand, plus the recipes are quick, always low or no fat, and yummy. As busy as I've been lately, they've been saving my sanity while still being healthy.

 

FITNESS

I really wanted to run this morning, but I had meetings at 8, and there was no way I was going to run before work. Then it rained all day long, and I was not looking forward to the treadmill.

As luck would have it, the rain stopped around 430pm, and I was able to go for a run after work. It was super muggy, but the temps were awesome (we're talking mid-70's), and I went for a 3.5 miler.

I'm really excited about something though. I've signed up for a race! I swear, the (nearly) gluten-free eating has totally helped the RA. I feel back to normal almost all of the time (and I can honestly say, when I don't, it's usually the day after I eat something with gluten in it). It's getting easier and easier to move towards gluten-free, and while I'm usually an all-or-nothing kind of girl, easing into it has been working so much better.

Anyway, back to running. I think I mentioned a couple of weeks ago that I'm going on a girls trip for my birthday in Oct. Four of us from VA are going to see a friend in WA who just moved there a month or so ago. We're all running a 5K together, and if all goes well, this will be me easing back into running races again.

LIFE

Well, it's Tuesday, and giving updates on weekday activities are usually pretty boring. Work takes up most of the day, and then random evening activities. R usually has swim, but she's nursing major allergies/head cold and is so stuffed up, swimming would be hard. It started hitting both D and I today – damned weather.

So since we were all home last night and tonight, we watched movies. Last night was Sky High, a fun flick about super hero high school. Tonight was Big Trouble in Little China. If nothing else, my children are seeing all the great 80's movies (I was so proud when A and M played “Bill & Ted” when they were little – running around and acting like them).

This evening, R and I watched an episode of Leverage. It was from over a year ago, and she kept pausing the show and asking me if I needed her to explain to me what was going on. It was actually kind of funny.

So that's it really. Like I said, weeknights are usually pretty boring! Then again, after the past few weeks, I'm kinda liking boring.

  1. I’ve got the first HH cookbook. I’ve not actually made anything from it though. I’m so so terrible about actually following a recipe like I should. Maybe I should pull it back down and dust if off (along with the others I have stashed). And I’m so glad to hear that your RA seems to be under control right now. That’s fantastic news!

    1. I seem to collect cookbooks – I think most foodies do. I do tend to dust hers off a lot lately though. They’re simple, and that’s a big plus sometimes!

      And thank you – I was really low at one point a few months ago thinking I’d not really get to run again. I’m just building up base mileage (can’t run 3 miles without a walk break!), but I hope I can get back to at least being able to run a half.
