I can't believe it's Wednesday! I swear, time is just flying lately. I'm still not able to work out, but today my neck is a ton better. Only small twinges. The conservative approach of motrin/ice/heat/time seems to be working. I think tomorrow I can definitely hit up a spin class or zumba. Still nothing that could impact my neck – even yoga – but I can get my slugging butt moving again. It's been tough just sitting about!
Food has been a lot of the normal stuff. Juices, smoothies, and the like. Today I made an awesome lunch that I'll totally make again. I made the sauce from the Creamy Dijon Pasta recipe from Everyday Happy Herbivore, but instead of serving on pasta, I steamed cauliflower and green beans. No kidding – two huge bowls was only 250 calories. That sauce, which uses the boxed/silken lite tofu, is amazing. The entire book was worth that one recipe (though they all rock). It's like an alfredo sauce – but with a protein kick and none of the greasy fatty cheese goo.
Apple, carrot, and ginger juice. Served over ice, just to shake it up a bit.
My dinner juice Monday night. Celery, tomato, scallions, collard leaves, radishes, cucumber, 1/2 bell pepper, and lemon. It was good – couldn't finish it…I think 2 scallions was a bit much. Next time, I'll skip the onion, especially before bed!
Work has been hectic, but have hit some major milestones this week, so that feels good. I'm moving my office tomorrow to a new permanent location. My big goal really is to get settled and everything on my to-do list done before the end of next Monday. After that, I'm out for 2 weeks, and catch up..quite frankly…is a b*****!
I saw this in the store and couldn't keep myself from cringing. Seriously…THIS is the best of the 80's we needed to resurrect??? I'm horrified (mainly because I think I had that pink skirt 20 years ago).
D was still asleep, and Bumble was highly unamused that I was awake and may expect her to be up and about too.
Today's morning picture! D and our youngest R.
Went out with AC last night. It's been WAY too long. I think we've started about 10,000 conversations, but have yet to finish one. It's one of my favorite things about our friendship…never a lack of stuff to talk about and we could have fun in a paper bag. Anyway, we hit up a pub in Virginia Beach and I had me some Leinenkugel's Summer Shandy beer. First of all, it's a really tasty beer. Second, you can't get Leinenkugel's in Virginia normally (only can now because it's a special brew) – but I grew up with it, as it's a native WI beer. I will say the bartender looked at me like I had 4 heads when I asked for the Leiny. Of course only us Wisconsinites would know that's what it's really called.
Bumble still pretending she's in the great outdoors…while refusing to leave the deck because she's actually afraid of grass.
D and A are at a concert tonight, so it's just me and the younger two (16 and almost 10), chilling out in the backyard. M is playing his guitar, R is chilling in the hammock, and I'm enjoying a nice Red Zin and blogging to all of you. Cheers, and hope you're having a Wonderful Wednesday too!
