When Sore Muscles Keep You Up All Night

One fun thing about bulk weekend cooking is that I have lots to eat during the week.  From a blog perspective, that means you get to see a lot of the same stuff over and over again for a week 🙂

Monday morning I didn’t have much of an appetite.  I know how important it is to have something for breakfast, but after some coffee, I just didn’t want anything.  So, I ended up with more of a brunch than anything else, which was leftovers – an arepa with daiya cheddar, Venezuelan rice and beans, avocado, and hot sauce.  Same thing I ate for dinner on Sunday, but no less yummy.

For dinner, I made a stuffed baked potato.  A rather large potato that I topped with Daiya, crumbled spicy tempeh (that I cooked on Sunday) and a dollop of vegan sour cream.  It was also really good, and a very good pre-workout meal!

Tuesday morning started with a green juice.  I’m in dire need of a trip to Whole Foods, so my produce pickings are a bit slim.  I still made it work and was happy to get a juice in before my day started.

Lunch was (yep….a repeat), arepa, rice and beans, daiya, and a ton of cabbage salad.  I only have one arepa left, so you may be done having to see pics of that!

I had a green smoothie in the early evening as my pre-workout meal, and then some tofu green curry.

FITNESS

Two days of crossfit.  That means two days of rowing, burpees (ick), pull ups, sit ups, deadlifts, Olympic lifts, etc.  My entire body is sore!  I’d roll over in the middle of the night, and my sore muscles would wake me up!

I’m grateful today is a run day!  Back to crossfit tomorrow and Saturday, but for today…going to enjoy a nice long run after work.

Speaking of running…D went again last night!  I’m very proud of him.  Starting is the hardest part.

LIFE

Not much exciting to mention.  It’s back to work this week, and it’s been very busy.  Between catching up on what I missed last week, getting ahead of the game on what I need to get done, and pack up my office (we’re moving), I certainly have plenty to do.  I’m grateful that I don’t have any late night meetings at all this week!

This weekend is the opening of Busch Gardens!  I really hope the weather holds, because we go every year (as long as it’s not wet and cold).  I guess we’ll see!
