Breakfast began in the kitchen and ended in the bathroom. No, it’s not what you think.
I was up a few hours before everyone else, so after my coffee, I wanted breakfast. Knowing my vitamix and tribest would make noise in the kitchen to carry up to my bedroom and likely wake D, I finally decided to take my blender into the green room bathroom (farthest downstairs bathroom from my bedroom) to whip up today’s green smoothie (banana, blueberries, spinach, brown rice powder, and water). I would have done it outside, but it was raining. My family thought I was nuts. Next time, I won’t be so nice!
Lunch was a Tofurky Kielbasa in a flax wrap with lettuce, mustard, sweet/spicy pickle relish, and tons of sauerkraut. Talk about filing!
Dinner was Italian night! I made a few sauces, one a vodka sauce from Happy Herbivore Abroad and one onion/sage/rosemary/wine sauce from an old Naples, Italy cookbook. I also made a vegan stuffed mushroom that was totally rocking.
Crissie’s Stuffed Mushrooms
*10-15 baby portabella mushrooms with the stems removed
*1/4 diced onion
*1 tbsp olive oil
*1/2 tbsp minced garlic
*4 oz vegan cream cheese
*3 tbsp red wine (I used Red Zinfandel because it was what I was drinking!)
*1/2t tbsp Italian Seasoning
*1/4 cup Daiya mozzerella shreds
*1/4 cup Daiya cheddar shreds
*preheat oven to 350 (I used my toaster oven)
*heat olive oil on medium heat in a skillet. Add mushroom caps, onion, and garlic. Sauté for about 5 minutes, until soft. Remove from heat and let cool.
*Put mushroom caps on a cookie sheet.
*Dice up mushroom stems, and mix with remaining ingredients, including the sautéed onion and garlic.
*Stuff the mushrooms and bake for 30 minutes uncovered.
*Eat them all before anyone else can
Today was a gym day. That was my plan, and I’m happy I went. I did a 45 minute ActiveTrax-generated workout (that’s the system my Y uses), and then ran for 45 minutes. All told, I was quite happy when I headed out of the gym – despite the treadmill run.
Before everyone was up this morning I did some research on upcoming races. I picked two, and registered for one (the other one doesn’t allow registrations until later this month). I signed up for a half marathon in June up in Williamsburg. It’s put on by the Wounded Warrior Project, and I’ve done a few of their 5K’s in the past. It’s a great cause in a beautiful city (starts at the University of William & Mary). The second race is a 10K in April in Richmond – the Run through the Monuments run. I’m very much looking forward to both. Something yesterday’s race reminded me of is that I love to run in events – and training has lost it’s fun when I don’t have something I’m actually training for!
This weekend has been absolutely beautiful. High 60’s and the type of December weather that has you opening up screen doors and windows. I wish it could be like this all the time!
It’s been a really nice and low key weekend. D went and ran Christmas shopping errands and came home with nothing. I did Christmas shopping online and am now done with my sister’s family and our parents! Hoorah for the power of Amazon!
I snapped a few pictures of Sammie guarding the house from the safety of the dining room window…daring to bark that anyone that comes within 100 yds of the front door. That’s my pups!
