Yeah, I’m not talking about puppies like my Sammie. I’m talking hot dogs. I’ve been a vegan for many years now, and I’ve never tried the tofu hot dogs. Until now. And they’re just as nasty as I remember actual hot dogs being. Yuck!
I bought a package thinking it may not be a bad thing to have in a pinch. At 65 calories each and low in fat, I thought it would be a win-win sort of thing – quick meal with high protein and not the most awful thing I could eat. Nope. Wrong. Nasty.
On Monday I made a batch of vegan mac n cheesy dinner with veggies (the sauce is a non fat cheeseish sauce from Appetite for Reduction – very tasty). For extra protein punch, I thought I’d throw those diced up dogs. I ended up picking them all out so I wouldn’t even have the rest of my leftovers infected by the smell and taste. Other than that, my meal was great!
Yesterday I threw a ton of stuff in the rice cooker for dinner. 2 cups lentils, 2 cups brown rice, 8 cups veggie broth, a cinnamon stick, 1 tsp. of cayenne, 1 diced onion, and 2 tsp. cumin. It made a TON and was much spicier than I thought it would be, but very good. I had some leftovers for breakfast this morning with steamed veggies.
Just runs the past few days and some at-home yoga. I have a race this weekend and it’s looking like the weather will be in the 60’s!
Sadly, my daughter did not make me any costume, so I won’t be getting any free trips to Boston by winning a holiday costume contest this year 😦 I’m thinking I need to reduce her allowance now….
The weekend was pretty quiet at home. D and A were in New England and got home in the early afternoon on Sunday. They both absolutely loved the town and the school. D sat next to the Lt. Governor from there on the plane ride out – whose husband teaches at the university they toured. The student who gave the physical campus tour had exchanged contact info with A, and she got a text from her saying that her professor mentioned A and D! Small world.
The past few days have been hectic – mostly just long days at work. The rest of the week is pretty low-key though, as we’re having our work holiday party Friday afternoon.
D’s been home sick the past few days and moping about (he’s a big baby when he doesn’t feel well), so we’re mostly very quiet at home too.
