I didn’t do a lot in the way of cooking – just simple thinks like beans and rice and spicy tofu soup. I made a batch of Happy Herbivore’s Sweet and Spicy Butternut Squash soup, and between that and some black bean soup, I was pretty much set!
We did pick up Mexican food of Thursday evening. I had a loaded taco salad and side of rice.
I think the coolest thing was at Busch Garden’s. They have a holiday buffet place called Dasher’s Diner. We avoid buffets because of R’s food allergies, but here they guaranteed there were no nut or nut products used, brought out an “allergy binder” to show me all the food they make and how it’s made, and had the kitchen supervisor come out and talk to us. I’ve always been a fan of BG, but they definitely went up a notch after that. We had dinner there, and everyone loved it.
I managed a couple quick runs and a trip to the gym this week. No swimming or anything, which is a bit of a bummer, but hope to hit the pool tomorrow after M and I workout.
I finally broke down and ordered flashing lights for my nighttime runs. A headlamp too! Running with a flashlight just isn’t fun, and I’m hoping this will work out better. And with the daylight hours in such short supply, it doesn’t matter if I run before work or after…it’s always fully dark. MC made a comment that I’m going to look like a UFO. Darn tootin!
Have you every had one of those weeks that just seemed to drag on and on and on, and even though there was nothing necessarily bad about you, it just never seemed to end?
Yep. Me too.
I think I’m struggling most with the early darkness. I’ve never been a big fan of winter in general, but I don’t like having it be full-dark before 530 pm. I thrive on sunshine, and during the height of summer when we have daylight until 9pm or sometimes later, I feel I can go all day long. In the winter though, I feel like I’m rushing to get things done – even though logically there isn’t any more hours in the day than there were six months ago. I guess I’m just a sunshine vampire.
So I finally broke down and hired someone to clean the house. Best thing ever! They came on Thursday to do a deep clean (windows, baseboards, vents, EVERYTHING). Merry (early) Christmas to me! They’ll be coming every other week going forward, which is such a weight off of me. Between working 40-60 hrs. per week, D working full-time, the insanely busy children, and trying to work in fitness and fun time, anything I can delegate off is a good thing.
D and A left for New England Thursday evening to do a campus tour. They’re both loving it, and I think this just jumped to the top of A’s list! Last week she submitted her applications to the 3 schools she’s most interested in (one in state, two not – here’s hoping for scholarships!).
Last night I took M and R to Christmas Town at Busch Garden’s. It was the perfect night for it – 50 and not windy. It was absolutely stunning this year, and I know my pictures don’t do it justice (D and A have the nice cameras with them, so I used my little point and shoot)!
Today, AC and the kids came over for some cookie baking and mimosas! Okay, so the kids actually played the entire time (which was cool) and I baked the cookies, but that’s fine with me (even though I’m not the biggest fan of cookie-making). It was nice just to catch up with AC and see my Godson! He’s gotten so big! The most fun was watching him play with the Tupperware bowls. He kept putting one on his head and crawling around giggling. It was awesome.
D and A should be home by 2pm tomorrow, so I’m really looking forward to the rest of the weekend. Quiet, cooking….and clean 🙂
