Inconclusive Gluten Experiment

Wow, well I have no sense of how much time goes by! I look at the date I published my last blog, and while it was technically yesterday’s date, it was 2 days ago for me. Working nights always screws me up like this!

After my Tuesday night-Wednesday morning shift, I went back to my hotel around 8am and went to sleep. I am fortunate to be in a part of the hotel that stays pretty quiet. I am glad I picked up a sleep mask at Whole Foods though, as the shade and curtains in the room aren’t black out ones. I woke at 330pm, took a shower, and took my time getting ready for work. A quick stop at Wegman’s got me a gorgeous salad (picture below) and some snacks for the night (mint chocolate soy and coconut milks, celery, hummus…the good stuff).

After another 12 hr shift, it was back to my room and back to bed. After getting up and showering, I decided to hit up Carrabba’s for dinner. Yum! I do have to make a dietary observation though. A few weeks back I wrote about going gluten-lite. For the most part I have been, and I have been thinking I notice a difference. The entire trip this week has been gluten-free for me until dinner tonight. I had a side salad, a pasta dish (pic below), and some Italian bread. Here are my observations and my caveats…

1 – I notice a distinct difference. 10 min after dinner my stomach hurt.
2 – 4 hrs later (now), I have a headache and am very fatigued.
3 – almost immediately…and still…feel bloats

My caveats….

1 – my stomach may hurt because I ate too much!
2 – I could have a headache and be fatigued because I’ve been working 12-13 hr night shifts with little solid sleep.
3 – see #1
4 – gluten heavy foods (pastas, breads, cookies, cakes, etc) are heavier and less healthy foods anyway, and maybe that’s the connection.

So…I don’t have any empirical evidence that I have even a little bit of an intolerance to gluten. I’m going to keep going with it though because I DO feel better when I avoid it. I’ll try and do a better ‘test’ in the coming months.

So here I am back at the command center until 7am. Most of the excitement has died down, so I imagine I’ll get a lot of important things done, like Christmas list planning and Thanksgiving dinner planning!

  1. Kind of sounds like you might be gluten sensitive to me, but I’m no expert of course. Even if you don’t, it sounds like you feel better avoiding it so why not keep it to a minimum. There are so many great GF pastas out there now as well.

    1. Thanks! I love the coconut milks, but have to say, the Mint Choc silk soymilk is my fav! I’m thinking I need to make an ice cream out of it. I just wish it wasn’t a holiday only thing.
