I ended up spending quite a bit of time in the kitchen yesterday. Never a bad thing, really.
I made a batch of lentil and couscous stuffed bell peppers in the crock pot. It’s one of my favorites, and I was really looking forward to making it for weeks now.
I also made a loaf of Italian bread to serve with dinner, complete with olive oil and spice dipping plates. I then made some salads with my homemade dressing of happiness, and a big lasagna (forgot to take a shot of that). Before bed, I made a batch of pumpkin pie doughnuts! I mostly used the recipe here on Oh She Glows. They came out totally awesome.
This morning (after my now needed 2 cups of coffee), I made a brown rice pasta with acorn squash alfredo and peas. This was one of my favorite meals last fall, and I think I ate it almost every day for months. I am SO excited that winter squash is back (I’m a much bigger fan than of summer squash).
Lunch was a quick burrito, and dinner was a leftover bell pepper.
I baked a cake tonight. R’s birthday is tomorrow, and her special request was a strawberry cake with vanilla frosting. So…cake has just come out of the oven, and I’ll frost it up tomorrow!
So R is still running a low-grade fever. When she’s not feeling well, she likes to camp out on our bedroom floor. She is mostly feeling just fine keeps running this crazy fever. No sinus infection or strep – just a nasty summer virus that lasts a good week and ends with a full body rash – which just started. It marks the end of contagion at least…and probably the beginning of fun for the rest of us!
I worked from home again today and got quite a bit done before R’s 315pm Dr’s appt. Once I got home around 430, I went back to work, and have been going pretty much since! I think I put way more hours in when I’m home. I get the morning with her, and D has to come home for the afternoon. I have several VP meetings and need to go in.
We got a new dryer yesterday from Craig’s List. Ours has been dying a slow and painful death for months. I don’t think it heated up at all for the past 6 weeks…
I’m heading into the office in a little while to visit with my team. We have big project going live tonight. We’re bringing one of our systems down at 9pm to do a full hardware and software upgrade. Should be done by 5am. They asked me to bring beer. Instead I’ll take them to happy hour in the morning!
A couple of packages arrived today from my parents. One is a big gift for R tomorrow, and the other was a gift for me! My Dad sent me these huge mason jars. He knows I use them like crazy, and I could always use big ones to store my seeds and bulk flours. So excited!
While I was working and baking a cake, D was taking A out driving. They were gone for quite a while – he’s starting to focus on her night-time driving. She should be getting her license in mid-November. He said she did great. Which is good, because he’s responsible for all driving education. You see…I’m a ridiculous control freak with driving. It started when I commuted between western Milwaukee and Chicago every…single…day. Nearly 2 hrs each way every day. It was pretty brutal and I did it for quite a long time (it’s when I discovered an intense love of audio books, but that’s a WHOLE other discussion). Anyway…since then, I don’t do well when other people drive. To but it bluntly….I’m a BAD passenger. It’s not in my daughter’s best interest to be a developing driver with me freaking out in the seat next to her. Just saying. I’m doing a public service, really. D’s not thrilled that he’s tasked with doing the 45 hours of behind the wheel driving with her, but cope. I do the cooking and the cleaning. He can teach our kid to drive.
