Eating Rainbows and Working Nights


I packed up a monster bag last night of food to get me through the night shift.  I ended up not eating before I went in, so I had my zucchini/tomato marinara, red curry veggies, flax crackers with hummus, and a bowl of cut up cantaloupe and bing cherries.

I ate the zucc right after I got there, and then the cantaloupe around 2am.  Nothing else though.  I find that when I’m really tired, I either can’t eat much at all, or I’m eating everything in sight in order to keep myself awake.  Last night was apparently the former.

I fell asleep not long after getting home this morning.  When I woke up, the first thing I did was make a cup of espresso in my Nespresso machine.  Totally awesome if you’re a coffee lover.  Anyway, I put in some coconut milk creamer and enjoyed the caffeine jolt I so desperately needed.

After an hour or so, I ate the red curry veggies.  They were good – but would have been better when eaten within an hour of making.  I’ll have to remember that.  Leftovers aren’t a good thing in the raw world.

For dinner, I made a Kitchen Sink Salad.  Romaine, green onion, purple cabbage, celery, carrot, broccoli, cauliflower, avocado, tomato, and my Dressing of Happiness.  It was awesome.  The kids had one too, and A was yelling “I want to eat rainbows” by the end of dinner.  She even had me package up the rest of the fresh-cut raw corn for a snack at summer school tomorrow.  Of my 3 kids, she’s the most likely to eat like me.  Just warms my heart!

I haven’t been hungry enough to have anything else, even though I have a huge menu for the week.  Here’s what I was “planning” on making…

Sunday –   avocado soup (never made it), salad wraps (nope), green smoothie (was sleeping), zucc marinara, and red curry veggies.  Can’t imagine why I thought I’d eat all that!

Monday – soft corn tortillas (nope – passed out when I got home instead of making these and popping them in the dehydrator), Mexican Lime Soup (to eat with the tortillas! But no…), and Chickenless Asian Salad (no – ate the kitchen sink salad instead).

The rest of the week??

Tuesday – crunchy zucchini slices with kimchi, and a pineapple, red cabbage, and corn salad.  We’ll see.  May have to go with the tortillas and lime soup instead.

Wednesday – baby bok choy salad and coconut Tom soup.  I’m a sucker for Thai food, so it’s hopeful.

Thursday – spicy mixed veggie “noodle” soup.

Of course lots of fresh juices and smoothies too.  Plus all the leftovers.  Ugh.  No way I’m going to eat all this…but it all sounds amazing!


After I was up for a couple of hours, I decided it was time to workout.  I was tired and my head was fuzzy from lack of sleep, but I was feeling even more like a slacker, so I went into my “home gym” (aka play room) and busted out a little over an hour of workout.

I first did my Women’s Health strength training workout.  Today was Day 3 of Week 2 (out of 12).  Fortunately I don’t need much equipment, and my balance ball and 5 lb dumbbells were enough.

Then I hit the treadmill for a quick 2 mile walk/run job.  I looked up last week a 4 week program to get back to basics in running after an injury.  I’ve stuck to it like glue with the exception of the 5 miler in North Carolina that I shouldn’t have done – but did anyway.

I’m feeling SO much better.  Not all the way there yet – and I blame the sitting on my butt during night shifts for the spike in back twinges, but that’s all it is – twinges.  Not real pain or anything.  I have a follow-up appt on the 18th, so I’m sure I’ll continue to stay on track.


Well, life is all about being upside down.  Working nights, (trying) to sleep days,  and still spending time with family has been crazy.  I will admit that I love working nights because I catch up on so much stuff.  I’m sure my team doesn’t appreciate waking to the barrage of emails and follow ups I send at 2am, but they’re all good sports about it.

The shift last night was sloooooowwwww.  We had 3 calls.  All night.  Two were before 11pm, so that left only 1 between 11pm-6am.  I kept trying to send the other two guys home, but they wouldn’t go.  One was locked out of his house and the other was playing catch up, like me.

I was home this morning just after 630am.  A was already up and getting ready for school, and R was awake any lying in her bed.  D woke up as soon as I came in, and I apparently fell asleep not long after.

Unfortunately, I didn’t sleep long nor well.  I was up by 1130am.  I gave up after an hour of staring at the ceiling, and started returning work emails and phone calls.  I was invited to a Tides Game Thursday afternoon, which should be really nice.  They have a luxury box (yeah, air conditioning) and food and drink for the afternoon.  If I sleep until noon, that’s 5 hrs, and I can totally make that!

After waking and emailing, I watched 2 episodes of Hell’s Kitchen before I felt guilty enough to workout.  After cooling off, I showered, dressed, and started making dinner before getting ready for work.  I’m worried it’ll be a long night, but knowing me, once I get working, I’ll wake up well!

Speaking of…I better get going or I’ll be late!!!

  1. Glad you’re easing into the running. Sitting is such an enemy I truly believe. Kind of funny on your meal planning – I have a tendency to sort of overplan my meals. It’s just me and my husband. And I make enough or plan on making enough to feed an army.

    1. I always make too much food…and I’m typically the only one who eats it! I agree about the sitting. I feel worse when I sit than when I can move around and stretch.
