I know I meant to have my Whole Foods buffet box for lunch, but I ended up having it for breakfast! After a cup of coffee, I ate my box of fun – sesame tofu, hearts of palm salad, multi-grain tabbouleh, brown rice, and dumplings. So yummy!
For lunch, I had a veggie burger with tomatoes, (homemade) pickles, guacamole, and mustard on a whole wheat bun. I also had a chocolate yogurt made from coconut milk that I picked up in Richmond yesterday. It was different, but I really liked it!
Dinner was a teriyaki tempeh stir fry with broccoli and pineapple over basmati rice. I got the recipe out of my 1000 Vegan Recipes cookbook. It was pretty good. The tempeh texture threw the rest of the family off though, so the jury is still out. I’m also new to cooking with it. Time will tell I guess.
R and I have both been wanting watermelon, so D picked one up on his way home from work. I have this huge melon slicer that makes ridiculously quick work out of watermelons and cantaloupes. It’s fun! I will admit that I have to stand on a stool to use it in order to get the right leverage. What can I say? I’m short.
I did an hour yoga class from Yoga Today over lunch. I’m loving this site. The class was $3.99 for an hour, and you download it and play on your computer. Because it’s an MP4 format, I can play it on my iPhone too, and I also have it on a thumb drive, so I can take it with me no matter where I am (like on a work trip or….my office!).
After work, I did my strength training workout. That makes three in a row, and I’ve officially completed my first week in the program (out of 12). The series will be finished a couple of days shy of my birthday.
About an hour after that workout, I went out for a quick run. And I do mean quick…only 20 minutes. I couldn’t bear to get on the treadmill, and I still am easing into it after the injury. I feel great, but I want to keep it that way! Even the over 90 degree heat didn’t bother me, it just felt so good to be outside.
Even though I don’t really sleep in much anymore, I really think I could have today. A was up and getting ready for school before D and I were even really rolling around!
I had a few meetings today, and was otherwise finalizing some budget work for 2012. The next few months are going to be insanely busy at work, but I can’t complain. I love what I do, so that helps I’m sure.
So now I have to go pack since I have to head out of town tomorrow for a couple of days. I can do yoga in my room, run on the beach, and do my strength training in the hotel gym. And maybe get that extra sleep I seem to be looking for 🙂
